- Gundruk is made by fermenting leaves esp Mustard leaves or Raddish leaves and then drying them to make various dishes. Gundruk is used to make Gundruk Soup, Gundruk Pickle and even mixed with other vegetables. I am seeing this video today. Yes, I remember in my childhood when I used to visit my uncle's house in Darjeeling I had seen the process of gundruk making. They used to put the pounded leaves in tin cannister for fermentation. Your video brought back my childhood memories.

Recently savoured dish made up of mustard leaves gundruk and I think it's pretty much underrated ingredient. It has a very unique soury taste which can go with pretty much any type of curries.
What I do is..wilt the spinach leaves for a wholesome day(dhoop mei) later in the evening I have it pounded..and have then sprinkled with maize flour( this makes the fermentation process fast and the leaves are amazingly sour). Within 4 to 5 days..your gundruk is ready to be taken out from the jar and again to be kept in the sun to be dried..

Absolutely fascinating. I recently purchased a noodle soup packet here in Texas at an Indian grocery store. The flavor was gundruk and I bought it out of curiosity. It was quite tasty so I decided to Google gundruk and learn more. Thank you for posting this very informative and marvelous video. It will be very simple and inexpensive for me to make gundruk at home using this method! :)

I'm from Shillong I love gundruk ka jhol but for many years I did not get a chance to have it now I have learnt to make it myself.
Please look at other gundruk making videos on youtube, stuffing it in a polythene bag and putting it out in the sun is a huge NO,NO!

Can you do with taro leaves?
No taro leaves. The best gundruk can be made from Rayo or mustard leaves. Other leaves that can be used is radish and cauliflower.
