- Bhat is a local lentil just like soyabean eaten in many parts of north India. In my travel to #Uttarakhand, I learned to cook a dish called #Dubke using this dal. Bhat dal is quite popular in #Kumaon region and takes a long time to cook. The taste of the dal makes it worthwhile to wait while it cooks.

As per me, its called Dubke because after adding water when you were waiting 45 mins for getting thick body, bubbles pop out of it sounding "Dubuk". You must have heard it if you were listening closely.

Lovely to see kumaoni staple beeing cooked.. just to add..while grinding a paste has to be added that is of Ginger/Duna(Chive)/green chilli/ lots of Hara Dhaniya and not to miss last chonka/tadka is a must and for that you need again some authentic uttatakhandi herbs, i.e. Jambu Ghas/Jeera/Sookhi Lal Mirch/ Heeng , Tadka on pure Desi Ghee.. This is the way it is cooked in our Houses in Nainital Almora 😊..Sabut Lahusun also can be added in Tadka..

We make gahaut ki daal ke dubuk in Almora Salt daal ko sil par peesane se jyada accha banta h aur mooli k patte ya dhania patta last mein horse gram yani kulthe ki daal

First of all thank you for exploring Kumauni recipe, My mom always add salt at the last, as salt sour the mixture . Also traditionally no rice is mixed with the Bhat , we add a bit of Atta with the mixture while it is being cooked . Happy cooking .

Infact a hard paste of same lentils(may be another like mutter,mansur and many more)should prepare wid chilli and other spices and then jo aap nai kadi type ka bhanaya hai yus mai yus hard paste kee chote chote but marble see bade shape mai dubokar pakaya jata hai,,,,,,yessleeye yess recipe ko dubke kaha gaya hai,,,,
Aap kadi perpare karney k leeaa Dhahi or Matha use karsaktee hai jo yess recipe ko aaur bhi tasty bandage,,,,,,,,

I am from Uttarakhand and I love Bhat. But we don't get it here in Mumbai. Whenever some relative goes to UK we ask them to bring Bhat.

Sir namak dubuk pakne ke bad and tyme me dala jata hai varna bhat ke dubuke phat jate hain phatne par vo tasty nahi hote so remember namak last m pakne par dale.

This recipe is Little different .. my mom's recipes of dubke is that to make small ball of granulated dal and make it like daily dal .... And this type of dubke very tasty must try .... 💕💕💕
