The BEST Veggie Bread (Vegan, Raw, Gluten Free, Paleo)

- Hey friend! I’m Heather Pace. Here’s my favourite veggie bread recipe that is raw, vegan, paleo, gluten free, grain free, nut free, and can be made keto by subbing all zucchini for the carrots. It makes amazing sandwiches and I also love a slice with mashed avocado, tomato slices, and hemp seeds sprinkled on top. If you’ve never had roasted eggplant in a sandwich, you neeeed to! It’s so good!!! It’s soft, creamy, and flavourful. Then add whatever other veggies and spreads you like. You could also use my beet hummus or my favourite green dip on it. Enjoy :))
Veggie Bread
1 cup sunflower seeds, soaked 30 mins - 2 hours, drained and rinsed
2 medium zucchinis, shredded
2 medium carrots, shredded
1 medium onion, roughly chopped and then finely chopped in a food processor
1/4 cup olive oil
2 tablespoons tamari
1/2 cup water
1 cup ground yellow flaxseed
1/2 teaspoon Himalayan salt
Process the sunflower seeds to fine crumbs in a food processor (it’s ok to grind them dry - its just healthier to soak them first). Add all ingredients to a bowl and mix well. Spread a layer of the mixture evenly on 2 teflex sheets. Score into desired sizes. Dehydrate at 145F for 1 hour and then turn the temperature down to 120F and continue dehydrating for 4-5 hours, then flip onto the mesh screen and continue dehydrating for another 5 hours until dry but still pliable.
Roasted Eggplant
1 eggplant, sliced into 1/2” rounds
Olive oil
Salt
Preheat an oven to 400F. Oil and salt both sides of the eggplant. Bake on a baking sheet for 15 minutes, flip and bake for another 5-10 minutes until they’re cooked through and can easily be pierced with a fork.
Add all your other favourite veggies to make the best sandwich ever!! 😍

There is a difference between Fahrenheit and Celsius people.
Wish they had this type of food available at the store
You could have dehydrated the eggplant while you preped the bread. It would've all been ready at the same time, raw, tasty and perfect. You can substitute eggplant for butternut squash as well.
I make veggie bread or crust twice a week with the pulp of the celery juice and other veggies.
I made this yesterday and it is just so very good!!! Will be a staple in my kitchen. Highly recommend!

Thank you for this! It was delicious. I used the seeds and veggies that I had on hand but followed this as a guideline! Turned out amazing! 😋 the flax seeds really held everything together and I was surprised how similar to dough it was when wet.

This recipe is DELISH! Thank you Heather...OMG was it good! I didn't do the eggplant, but the bread is divine. I dehydrated it at 113 degrees F and it came out perfect. 5 stars!

45 C is equivalent to 113 degrees fahrenheit she is still under 118 Fahrenheit/F. Raw vegan diet consider food raw if it has not had exposure to temperatures higher than 118 °F (48 °C), she's good.

You cook the bread above 45 degrees C, meaning its not raw as the enzymes will have broken down.

Yes, correct..... I just use the dehydrator and patience 😁
When did she cook it above 45degrees?! She did set it to a higher setting but that really just to get things going. The dehydrator never goes about 115 degrees with is why it’s turned down after an hour! Which would still be raw

Hey. This looks like an amazing recipe. I eat oil-free food. Can you suggest a replacement ingredient for oil to make the bread batter. I don’t want to use oil in it. What can work well?

This bread tastes amazing but my only issue is that in your video it shows 3 zucchini and 3 carrots. On your recipe it calls for 2 zucchini and 2 carrots ,my bread came out like crackers instead of bread. Amazing taste tho.So should I use 3 of each ?

Great video, thanks! Got a question about the dehydrator temperature. Doesn't the 1 hour at 145 degrees cook the bread somewhat so it's not longer raw?
No because the bread doesn’t reach an internal temperature of 145. The hour at that temp boosts the drying process to prevent bacteria. Dr. Gabriel Cousins did a lot of research on this, you can read more about it.

can you freeze it after drying
My wraps dry out along the edges in the dehydrator whilst the inside of the wrap is still wet and undone. How to avoid this???
I did notice the bread was cooked at 145 degrees. Isn’t “raw” considered below 115 degrees? Thanks for the video. I’ll try the recipe but I’ll have to put the bread in the dehydrator for 115 degrees for 8 hours.

Yes the bread goes in at 145F only for the first hour. This is important because it is simply allowing the dehydrator to come up to temperature quickly to avoid bacteria/microorganisms forming. Then it is turned turned down for the duration of the drying process (115F-120 will keep it raw).
@@heathypace Yes . I joined 3 short courses on raw vegan food prepp and in all 3 they explained so clearly than unless you do what your doing here about deshidrating temperature the food gets spoil by mould etc and one hour 145 does not affect negatively the food ,s enzimes

Hello Heather - what is best way to store this bread? A couple days in fridge (in plastic) - getting wet. Absolutely fabulous bread ... want it to stay fresh as long as possible - how?
Thank you! :) I always store it in either a sealed container or large plastic ziplock bag in the fridge. If it’s getting wet in the fridge it might not be dried enough. It also freezes well so maybe just keep enough for a few days in the fridge and freeze the rest. I have successfully kept it in the fridge for 2 weeks (although that won’t work if it’s still wet).
