    Great chili recipe. The coffee makes perfect sense. I use 2 tsp of cocoa powder for the back note flavor. I thicken chili with corn masa and use pablano instead of green bell pepper eliminating the can of hatch chilies. Thanks for sharing

    Ever since I accidentally came across your biscuit recipe, I am hooked on trying your recipes! Biscuit recipes that I tried before were miserable, I think they usually said to roll out the dough, and they never turned out. I had a happy husband when I presented him with good, buttery, flaky biscuits! And now this chili will be for tonight, can’t wait to taste it after the liquid smoke is added, and it’s thickened. One thing though, to reduce the sauce, shouldn’t the lid be off? He also loved the Mexican cornbread with burger in it. All these tried in 1 week! Thanks to Covid 19!

    • @KenClick
      @KenClick  Před 4 lety +1

      Yes, if you take the lid off it will reduce and thicken faster. But there is something wonderful about slow simmering that I enjoy.

    You're my kinda guy....."the ain't nothin' wrong with puttin' beans in the chili kinda guy." I add a tiny, tiny bit of unsweetened cocoa powder to my chili. Makes it a rich russet color and gives it a little something extra no-one can figure out, when the littlest bit goes into the pot. My mom's version always had green pepper and beans but never spicy.
