    There is great value in these movies. Many homesteaders make videos about canning, but they use lots of sugar. I love learning about nutrition and food preservation while watching your videos. I can't find this type of content anywhere else. Please keep them coming! Healthy homesteading!

    I live in Gravenstein country. We have 3 apple trees, love having another use for the apples. Have dehydrated several pounds of pears and apples for Journey's Supported Living (they support 10 disabled men). They will love your probiotic applesauce, and it's good for them. Thanks Stacy!

    Fermented apple sauce is so good and so easy! (although we use our vitamix instead to blend our apples:) We blend the whole apples and like to add cinnamon and some kombucha or water kefir for the starter culture.

      Hi Maya, Yes, roughly the same. A tablespoon or two of any type of starter culture per quart.

      Sorry new here- made some with her video- she said warm temperature not good- you want like 60-70 degrees or gets acid- and won’t taste good. Well right now we’re having very hot weather. Can you let it culture in Fridge? Hope I can get a answer cause I just made it.

    Love this!! Applesauce helps with heart burn and acid reflux, but having it raw is even better than cooked kind. My favorite is Envy apples. 👍♥️

    I agree, Stacy! Fall has such a distinct fragrance of its own in the air. The warm beautiful colors of the foliage, the aromas of baking pumpkin & apple pies, pumpkin breads & apple cakes & muffins filling homes in the community, the sound of people & their pets walking through crisp, fallen leaves...it all warms the heart, with thoughts of the holidays to come.

    Thank you so much! I’m excited to try this!
    Cultured apple sauce (makes a quart)
    6 -8 apples
    2 heaping tablespoons maple syrup (sweeten to taste)
    2 teaspoons cinnamon
    1/2 teaspoon salt
    2 tablespoons kefir or whey
    Chop apples to your consistency
    Mix in maple syrup, salt, cinnamon, kefir/whey.
    Add any other spices to your taste

    My favorite apple is the Granny Smith, they are high in caprylic acid.
    My favorite combo to eat with the apples is melted Brie cheese 😋💕

      Dawn Hash Hi Dawn. Did you can your apples to last for years with canning? My mother used to can fruit . I remember eating peaches that were at least 10 years old. I would like to get into canning foods. I remember her putting the filled jars in boiling water .

      I made Apple butter,Apple pie filling all canned. I would have rather done some the way Stacey does to keep it healthy and good for our gut👍👍 I knew you could do veggies like that but was surprised with fruit being done this way..

    Thank you Stacy, Great video. We use Granny Smith apples a lot in our home. I make Water Keifer regularly and second ferment with the apples and lemon. Also have a juicer and use the Granny Smith with many other fruits and vegetables on a daily basis for my morning juice. Start every day off right.

    Tried this cultured applesauce recipe as outlined in the video, using the whey liquid method -- and then used the leftover, drained yogurt to substitute out some of the cream cheese in a cheesecake recipe afterwards. No waste, and both were delicious! I left my applesauce to ferment at 65 degrees F for 2 days, and then into the fridge. Also used the coffee filter and elastic over the top so that I didn't have to remember to burp the Mason jar. Looking forward to the ACV how-to with the apple cores! Thx for the easy-to-follow instructions!

    I'm 70 now, but when I was raising my boys I made homemade applesauce. I used the 2nds of Jonathan apples. I cut out the bad spots and outside stem. Then I slowly cooked the cut up apples with peel, seeds and all. Then I used a Folley Mill to get my sauce. My boys liked the sauce just as it was. The color was awesome and there wasn't a lot of waste - just yummy natural sauce.

    You have changed the way I look at food and Health. I now ferment, sprout, grow a garden, make crazy hay punches, moved into herbalism, slowly working on homesteading etc. all because of you.     I love Fuji apples for eating, and I bake my pies with a combo of, Fuji and Granny Smith apples. Yes, I cook from scratch. Nothing like home-cooked meals from scratch.

      Also, organic Fuji apples are easier on the digestive track when eaten raw. They have a wonderful flavor. Granny Smiths are so delicious in pies and apple crisp. They don't get mushy and the tartness balanced with a little brown sugar is the best! 😊 Macintosh are great for baking, also.

    I love the Pink Lady or Cripps apples. They're great! Crispy and sweet. To cook with I love the Golden Delicious. But I love any and all kind of apples.

    I have a hand chopper similar to the one you used Stacy, LOVE that thing. Mine has other attachments and things like a basket that can put in it and it's a salad spinner too. Makes slaw in like 5 minutes!

    I too prefer the Golden/Yellow Delicious for the type of canning you are doing. For jams and jellies, we always preferred the harder skinned more dense varieties. But regardless, Statcy you did a wonderful job with this video and though I have just recently found your channel, it is one of my favorite to learn and grow from.

    I haven’t come across a apple that I don’t like yet. Apple sauce, apple butter, pies and popovers. Not to mention apple fritters cooked in a cast iron skillet on a cold morning. And don’t even mention a warm apple fritter after supper with a scoop of homemade vanilla ice cream. Why would anybody want takeout food over what God has given us.

    My late husband loved for me to make homemade apple pie and I always made my crust too. Cored whole apples are good baked with real butter and a little brown sugar or maple syrup would be good in the center where apple core was.

    Last year I made both ACV and Stacy's apple "Brandy". I used a mixture of apples I gleamed from a friend's trees that would have gone to waste. Both turned out fantastic. This year's batches of both are currently in jars " doing their thing" !

    I haven't made fall apple cake since going gluten free in 2009! Golden delish/granny Smith mix was what I used to go with. I bought cassava and tiger nut flours to dabble in baking again... that will be my mountain peak! lol yes, boozy fermented apples are not family friendly!

    I like to use Jonagolds when I make my apple butter. This year I tried something new and used the slow cooker instead of the stovetop to thicken it. Loved it, a lot less work. Made smaller batches but still better than the other way. Your applesauce sounds great, I'm going to have to try it.

    We replaced our diseased apple trees this year with a variety better suited to our zone. I can’t wait to have homegrown apples to make this.

    Fugi apples for just about everything! Perfect tang with just the right amount of sweet. Though I do throw in a few granny smiths when making apple butter

    I really like Honey crisp or Pink Lady apples for fresh eating. They stay crisp & juicy for a month, so you can buy ALOT on sale! I mix Granny Smith w/McIntosh or Jonathan for pies/applesauce.

    We only cook from scratch, and I'm definitely going to try this recipe too! I think the last time we could buy a lot of apples, they were Elstar, and they tasted very good in apple-crumble... ;)

    What Stacy says is so true! I had surgery on my right (dominant) shoulder 2.5 weeks ago... OMG, my left arm is soooo much weaker!

    I just cooked baked apples for dessert tonight. I’m definitely making your recipe! I love culturing veggies and fruit. Especially cranberry and apple for Thanksgiving!
