About OFF GRID with DOUG and STACY:
We moved to our 11 acres in 2011 from a large city in the Midwest with zero carpentry and farming skills. We live with no solar / wind power / public water or well. We share our adventure to a sustainable life, growing our own food from vegetables to meat. We post videos DAILY and they range from HOW TO to EVERYDAY LIFE and NUTRITION on the off grid homestead. We were city folks just like you probably and wanted to enjoy life and have more control over our food. We share food recipes as well as natural remedies. - Zábava
There is great value in these movies. Many homesteaders make videos about canning, but they use lots of sugar. I love learning about nutrition and food preservation while watching your videos. I can't find this type of content anywhere else. Please keep them coming! Healthy homesteading!
Thank you, Stace for making fermented foods easy to do. God bless you. 🙌
Dear stacy..what a jewell you are..sweet kind caring heart..so down to earth..so real..a breathe of fresh air and sunshine..so glad we found ur channel here on you tube..always a joy to see..
Stacy, you have the prettiest outdoor/ harvest kitchen I have ever seen!
And this cultured applesauce is also on my must do list😀
Not sure how you kept a straight face teaching us while the little dog was doing the growly thing. So cute. Thanks for sharing.
The puppy was growling and Stacy didn’t skip a beat.
I would love to watch more cooking from scratch especially the healthy techniques that you are famous for.
I live in Gravenstein country. We have 3 apple trees, love having another use for the apples. Have dehydrated several pounds of pears and apples for Journey's Supported Living (they support 10 disabled men). They will love your probiotic applesauce, and it's good for them. Thanks Stacy!
Fermented apple sauce is so good and so easy! (although we use our vitamix instead to blend our apples:) We blend the whole apples and like to add cinnamon and some kombucha or water kefir for the starter culture.
Would you use the same amount of kombucha as she used kefir? I'm vegan, but would love to try this!
Hi Maya, Yes, roughly the same. A tablespoon or two of any type of starter culture per quart.
That's good to know as I have plenty of kombucha so that would be easier. I like how Stacy keeps things simple.
Thanks for the kombucha suggestion! Very excited to try this and make ACV with the apple scraps as well.
Sorry new here- made some with her video- she said warm temperature not good- you want like 60-70 degrees or gets acid- and won’t taste good. Well right now we’re having very hot weather. Can you let it culture in Fridge? Hope I can get a answer cause I just made it.
I am looking forward to trying this. I will wait til the weather cools a bit. I love when you show us off grid preserving methods.
I would love to see how you use your finished ferments in some meal prep videos!
Love this!! Applesauce helps with heart burn and acid reflux, but having it raw is even better than cooked kind. My favorite is Envy apples. 👍♥️
I got tickled at your dog growling 😂. I have never had apple sauce that way but it sounds amazing!!
Yes...please keep showing puppy antics 😂
When I watch your videos, Stacy, I feel like we could sit down with a cup of coffee or tea and it's like I have know you for 20 years or more! With so many of these nutritious recipes and your turquoise blues, overalls--not to mention your science speak. I love your videos! I just made your garlic honey recipe and will make the fermented apples this weekend.
I get so caught up watching ya'lls videos, I lose track of time. Thanks for all ya'll you teach..
I agree, Stacy! Fall has such a distinct fragrance of its own in the air. The warm beautiful colors of the foliage, the aromas of baking pumpkin & apple pies, pumpkin breads & apple cakes & muffins filling homes in the community, the sound of people & their pets walking through crisp, fallen leaves...it all warms the heart, with thoughts of the holidays to come.
🍁🍂🌻🧡🌻🍂🍁
(I noticed today, all of your beautful plants in your outside kitchen. Where do you put them all in winter?)
I can still remember when I started watching your videos...you were in the 'stone's age fermenting 🤣...you've come a long ways!
Love your outside kitchen
That's the cool thing about doing it yourself. You can always do it to taste.👍
Yummy 😋!!! I have only just recently started really appreciating probiotics, thanks for the share!!!
Cortland apples because they are large, have white flesh and are great in baking. Delicious!
I can't wait to make this applesauce! And I look forward to your video on the apple cider. I love that chopper, works great. And Molly is so happy, what a joy! Thanks Stacy, and God bless you. 🙋♀️💖💖💖
Thank you so much! I’m excited to try this!
Cultured apple sauce (makes a quart)
6 -8 apples
2 heaping tablespoons maple syrup (sweeten to taste)
2 teaspoons cinnamon
1/2 teaspoon salt
2 tablespoons kefir or whey
Chop apples to your consistency
Mix in maple syrup, salt, cinnamon, kefir/whey.
Add any other spices to your taste
Absolutely loved this recipe. I got such a kick out of your pup. Such a cutie pie!!! Thank you very much.
It tickles me to hear your fur & feathered babies in the background 🐶🦆🐱💕
My favorite apple is the Granny Smith, they are high in caprylic acid.
My favorite combo to eat with the apples is melted Brie cheese 😋💕
I enjoy watching your channel, you two always bring a smile to my face .
Blessings 💕🌈
Just looks so yummy that I’ve gotta make it. Molly’s just talking away in the background telling everybody she’s in the outdoor kitchen with Mom. Wow you’ve got a lot of food to put up, very productive year in the garden. Love this vid.
I cant wait to buy the starter kit and make this! Thanks Stacy for teaching this old lady new tricks! Hugs From Nebraska! Yummy!
I just put up like 40lbs of apples. I wish I would known about this technique . ...I will remember this for next year. Thank You
Stacy
Dawn Hash Hi Dawn. Did you can your apples to last for years with canning? My mother used to can fruit . I remember eating peaches that were at least 10 years old. I would like to get into canning foods. I remember her putting the filled jars in boiling water .
I made Apple butter,Apple pie filling all canned. I would have rather done some the way Stacey does to keep it healthy and good for our gut👍👍 I knew you could do veggies like that but was surprised with fruit being done this way..
Wow that spinning chopper is pretty cool!! I’m going to try this recipe with my daughter!! Thanks Stacy!!
Love hearing Molly in the background
Good morning all! Happy Monday! Hope everyone has a blessed day. Eating it’s honey crisp.... baking grannies and pink ladies.
Hi, Stacy. This is Chris texting from Texas. My newly discovered favorite apple is the Pink Lady. It's crispy with a perfect balance of sweet and tart. They became my favorite the moment I first tried them last year.
P.S. Give my best to Doug for me. He's awesome.
Hey Chris I'm Elsie from Texas Ft Hood, KILLEEN area
Thank you Stacy for sharing this recipe!
Thank you Stacy, Great video. We use Granny Smith apples a lot in our home. I make Water Keifer regularly and second ferment with the apples and lemon. Also have a juicer and use the Granny Smith with many other fruits and vegetables on a daily basis for my morning juice. Start every day off right.
You can also buy the rubber shelf liner and cut it to any size and keep some in out door kitchen.
I love this recipe, I'm going to try it this week! Thanks Stacy and Doug ❤
MacIntosh have always been a favorite of mine to eat. There is something about the peel and texture of the flesh.
Thank you Stacey for the recipe. Love the dog sound on the back. lol
I like to use a variety of apples when making an apple dessert. I'm looking forward to your cookbook 💞
Awesome, never even thought this was an option. So cool! Thanks for sharing
Hi guys,I just discovered your channel! Looking forward to your videos! We've been off grid now for 19 year's and wouldn't change it for the world, your home looks alot like ours when we first started out.it brings back lots of good memories!
Thanks for your “cooking” videos! Liking the recipes and your added knowledge about health benefits(++).
You can also make grain kefir with sprouted grains or quinoa, just sprout and soak them in water for a few days.
Tried this cultured applesauce recipe as outlined in the video, using the whey liquid method -- and then used the leftover, drained yogurt to substitute out some of the cream cheese in a cheesecake recipe afterwards. No waste, and both were delicious! I left my applesauce to ferment at 65 degrees F for 2 days, and then into the fridge. Also used the coffee filter and elastic over the top so that I didn't have to remember to burp the Mason jar. Looking forward to the ACV how-to with the apple cores! Thx for the easy-to-follow instructions!
How did you keep it at 65°?
Maybe someday you could write a cookbook. I so enjoy making your recipes. Thanks for sharing.
Yes! Cooking from Scratch with Stacy❤❤❤
I'm 70 now, but when I was raising my boys I made homemade applesauce. I used the 2nds of Jonathan apples. I cut out the bad spots and outside stem. Then I slowly cooked the cut up apples with peel, seeds and all. Then I used a Folley Mill to get my sauce. My boys liked the sauce just as it was. The color was awesome and there wasn't a lot of waste - just yummy natural sauce.
I’ve been watching you for about three months now and all I wanna say is you are a gift from the universe!
You have changed the way I look at food and Health. I now ferment, sprout, grow a garden, make crazy hay punches, moved into herbalism, slowly working on homesteading etc. all because of you. I truly do love watching both you and Doug and I am so grateful that I found you. You are a beautiful soul. Love from Southern Utah.
I love Fuji apples for eating, and I bake my pies with a combo of, Fuji and Granny Smith apples. Yes, I cook from scratch. Nothing like home-cooked meals from scratch.
Also, organic Fuji apples are easier on the digestive track when eaten raw. They have a wonderful flavor. Granny Smiths are so delicious in pies and apple crisp. They don't get mushy and the tartness balanced with a little brown sugar is the best! 😊 Macintosh are great for baking, also.
🍂🍁🍎🍏🍁🍂
Ambrosia is an incredible tasty choice...doesn't brown when sliced.
I love honeycrisp!
@@joaniestoddart3298
I'm leary of apples that don't brown.
www-m.cnn.com/2015/02/16/health/apples-genetically-modified-usda/index.html?r=https%3A%2F%2Fduckduckgo.com%2F
You can always add that you cannot take out so I agree with you wholeheartedly Stacy
love the pups playing tug in the background 😅😗😝🐶
Just found this! My fav apple is Mutsu! They are similar to golden delicious but larger.
I have never seen a hand-machine like that before. very cool.
We Love Fuji Apples! Thank you for this delicious recipe. We'll make it tomorrow!
thanks for all you teach. GOD BLESS
I love the Pink Lady or Cripps apples. They're great! Crispy and sweet. To cook with I love the Golden Delicious. But I love any and all kind of apples.
Thank you Stacy for another great recipe 🧡
I just made applesauce a month ago and used my peels and cores to make ACV for the first time. Strained it yesterday. Looking forward to the final product.
What is ACV???
@@friendlytravelsp5516 apple cider vinegar
I have a hand chopper similar to the one you used Stacy, LOVE that thing. Mine has other attachments and things like a basket that can put in it and it's a salad spinner too. Makes slaw in like 5 minutes!
Thank U Stacy . . . I know this Apple Sauce is Fabulous !
Oh, my! If this recipe is in your cookbook, I think I need it!
I too prefer the Golden/Yellow Delicious for the type of canning you are doing. For jams and jellies, we always preferred the harder skinned more dense varieties. But regardless, Statcy you did a wonderful job with this video and though I have just recently found your channel, it is one of my favorite to learn and grow from.
Looks yummy! Thanks for the video. All apples are yummy to me but my favorite is the pink lady 😊
Thanks Stacy; great timing! I have a bunch of organic apples to put up so will try your recipe with some of them. I've been dehydrating and canning mine but this is good to make up healthier food. I love fall too! Is that little Molly I see? She's a cutie! Maggie must be taking a nap. I love fall too. You have such a beautiful place. Blessings to you and Doug and all the critters.🙏😊👵💖🐕
Listen at Mollie growling!!! 🤣. Riley prefers Granny Smith apples, the girls and Craig like Galas and I like any except red delicious! Have a great Fall day!
Cortland apple are my All time favorite apple, right off the tree!
I like a good wine-sap type kinda sweet and tart. Also I guess its fine to stir with your left or your right hand but most of the time I use a spoon, lol
I love this video.... Il be trying this, for sure!!! Thank you for all you guys do! I'm loving these videos about fermenting and cooking!!! 💖💓😊
I haven’t come across a apple that I don’t like yet. Apple sauce, apple butter, pies and popovers. Not to mention apple fritters cooked in a cast iron skillet on a cold morning. And don’t even mention a warm apple fritter after supper with a scoop of homemade vanilla ice cream. Why would anybody want takeout food over what God has given us.
My late husband loved for me to make homemade apple pie and I always made my crust too. Cored whole apples are good baked with real butter and a little brown sugar or maple syrup would be good in the center where apple core was.
My partner is allergic to apples so l am going to make mine out of pears! I think it will work the same! Thanks for all the great recipes! I love delicious apples! Nancy from Canada
Can you share yours for pears from start to finish? Please..from how many of this or that
Save some apples for the apple butter. It's so good with warm biscuits. Thanks for sharing this with us. NUGGET 💎😂😉🙌❤
I love to eat Pink Ladies, Empire and Macintosh apples and cook with Gala apples! I am looking forward to your ACV video! Thank you so much, Stacy!
Peels and cores makes a GREAT Apple Butter as well.
Molly sure is having fun. My favorite apple is Granny Smith. I like the tart, sour stuff.
I have never heard of water kefir! Thank you, great ideas. I love Honey Crisp apples above all others and Granny Smith for baking and cooking.
I made your Pumpkin Pie. It was the first time I had made it and it was yum. I'm going to try the apple sauce and look forward to making Cider Vinegar.
Thank you Stacy for this information on how to make homemade apple sauce🥰
I’m excited to find yet another use for my water kefir. Will definitely be trying this! Can’t wait for the video on the apple cider vinegar. I’ve been really wanting to make my own. Thank you so much!
What is kefiner?
I watched a homesteader make apple jelly with thr cores & peels.
Last year I made both ACV and Stacy's apple "Brandy". I used a mixture of apples I gleamed from a friend's trees that would have gone to waste. Both turned out fantastic. This year's batches of both are currently in jars " doing their thing" !
I will be trying this method for apple sauce this season. Goldens are a favorite, along with Gala and Pink Lady.
Ummmm Steve I agree with that !!
I'll try this recipe for sure. My all-time favorite apples for cooking and baking are Stayman and winesap. Both are crisp, juicy, and tart with a hint of sweet.
I love watching your videos, and my favorite apple is the Granny Smith, because of their tartness.
Hi Stacy! Thanks for another wonderful video! I love to cook from scratch and am trying to eliminate processed food from my diet. Looking forward to your next video!❤🍎
We are a Fuji Apple Family! Fantastic video. We just made applesauce but are going to be doing a fermenting class with our homestead group next month and I am sure everyone will love this!
I'm in NH. our local orchard has Mac, Cortland ,Jona gold and Honey Crisp . There are others but these are my favourite.
Thank you so much for your videos. They are so much fun to watch and very informative.
I haven't made fall apple cake since going gluten free in 2009! Golden delish/granny Smith mix was what I used to go with. I bought cassava and tiger nut flours to dabble in baking again... that will be my mountain peak! lol yes, boozy fermented apples are not family friendly!
I like to use Jonagolds when I make my apple butter. This year I tried something new and used the slow cooker instead of the stovetop to thicken it. Loved it, a lot less work. Made smaller batches but still better than the other way. Your applesauce sounds great, I'm going to have to try it.
Really enjoy this Cooking from Scratch videos! I ordered a fermentation kit last night. Even though I'm a little nervous about doing it right I'm gonna try! Thanks for all your great info Stacy! You all rock!!!! BTW favorite Court and Honeycrisp.
GOODMORNING 😊💜😊
Golden delish is the Best!
LOL, your dogs playing noises are so funny. And, the fact you just keep going without a notice is even funnier 😁
We replaced our diseased apple trees this year with a variety better suited to our zone. I can’t wait to have homegrown apples to make this.
Fugi apples for just about everything! Perfect tang with just the right amount of sweet. Though I do throw in a few granny smiths when making apple butter
I really like Honey crisp or Pink Lady apples for fresh eating. They stay crisp & juicy for a month, so you can buy ALOT on sale! I mix Granny Smith w/McIntosh or Jonathan for pies/applesauce.
We only cook from scratch, and I'm definitely going to try this recipe too! I think the last time we could buy a lot of apples, they were Elstar, and they tasted very good in apple-crumble... ;)
Blessings and love from The Netherlands,
Diana
saw Mr. Bones sitting with U can not wait for ACV video. Thanks Stacy Johna McTaggart Wheeling WV
love your recipes, you cook like I do (close enough measuring). I end up watching these videos many times in order to get it all written down. Thanks!
Love Fuji and the kids love the old Granny Smith!
I, also, think that golden delicious apples makes the best applesauce.
What Stacy says is so true! I had surgery on my right (dominant) shoulder 2.5 weeks ago... OMG, my left arm is soooo much weaker!
I just cooked baked apples for dessert tonight. I’m definitely making your recipe! I love culturing veggies and fruit. Especially cranberry and apple for Thanksgiving!
