  • Wild garlic risotto! Pussy willow! Turkey tails! Jack by the Hedge! Red Kites! And (maybe) Gary Numan's airplane! (Possibly)
    It's all happening on the Chiltern Hills this week.
    Oh, the risotto recipe? Here you go.
    STEP 1
    Fry off a finely chopped onion in a pan with some oil. Once translucent, throw in a handful of risotto rice per person. stir until rice is coated in oil and mixed with onions. Add a good handful of finely chopped wild garlic and a knob of butter.
    STEP 2
    Start adding stock, ladle by ladle. I used a chicken stock I'd previously made with a chicken carcase but any chicken or veg stock will do. Add some small florets of cauliflower and keep stirring and adding more stock as the rice takes it up. You can also add some white wine for extra flavour.
    STEP 3
    I had some leftover roast chicken from the same bird that provided the stock so I only needed to add it at the end as it's pre-cooked. If you're using fesh chicken, add it earlier in small pieces when you add the cauliflower. Keep stirring and adding stock. Taste the rice every so often - you want it to be 'al dente' (to have some bite but not raw or chalky). When the rice is nearly ready, add some frozen peas.
    STEP 4
    When the rice is just about there, turn down the heat and add a good handful of cheese and stir it through. Parmesan is traditional but you can use anything you like. I often use cheddar as there's always a block of it in the fridge and risotto is a common 'use up leftovers or whatever is in the fridge' type meal at Colgan Towers. Season as necessary, serve and enjoy!

    More random childhood memories: have you ever tried picking some wood sorrel (Oxalis acetosella) in spring? Heart-shaped leaves that come in threes, bit like a clover. They taste a little sour, like a sour sweet! Fun for kids, but don’t eat too many or the acid will upset your stomach. It was the first thing I learnt how to forage in the wild. The second was chanterelles, I think, and the third was some sort of root that’s got this sweet, liquorice-like taste to it.

    I love your channel, your videos are so nice! I don’t know what to compare it to, but it feels like I’m getting to hang out with you and we’re already good friends. There’s a leafy tree right outside my window in my flat, and I have seen both buds and the first beginnings of leaves. I moved here in November, so the tree was bare then. Guess we’ll find out what species it is!
    This might sound strange, but this reminds me of going on walks with my father and looking at the dew, looking at the signs of spring and saying hello to the harvestmen in the river (insects that walk on water and eat mosquitoes).

    These videos remind me of my grandad, who died due the covid vaccine giving him heart problems. He passed away in his sleep. You are very comforting!!
