- In China, there is a giant dumpling the size of a bagel that’s filled to the brim with soup and crab roe. And no, you should not eat it with a straw. We went to Jiangsu Province to see how tangbao is made-and learned the right way to eat it.
This is the second episode in our 10-part series about different kinds of bao in China. In the next episode, we’ll go to Hong Kong to learn the art of making char siu bao. Stay tuned!
0:00 What is a tangbao?
1:53 How is it made?
4:34 What makes it soupy?
7:16 How do you eat it?

So... there was a kitten meowing outside, and it happened right when that man's name was revealed (Miao). I legitimately thought that they added the kitten sound as a funny joke. I had to replay the video two or three times to realize it was a real kitten meowing in my neighborhood XD
Now that's a coincidence worth mentioning
Mmmm. I spot some man of culture here 👁️O👁️

Damn they don’t buy anything premade. They are making everything. I want to go there
They always do in certain restaurant in my country. It's a nationwide restaurant.
Well Karen said the flour was premade / processed.
Most big restaurants will make everything

Ohhhhh I really want to give you one of mine.
I enjoy seeing the pride he and other bao chefs take in their craft and how they honor their masters/forebearers and do not consider it beneath them to do so. Thank you Clarissa and team for another well done series.

Influencer, the most cancerous term modern humanity has come up with.
Nobody calls them the “baos” it’s like calling every Italian noodles “spaghetti” but they actually got fettuccine, linguine, lasagna. Same difference as dumplings, different shape different name.
for rice dumplings it’s “粽”(zong) for little dumplings like 🥟 it’s “餃”(Jiao) for white bun with some meat in it it’s “包”(Bao) and these kind of dumplings in the video are specifically called “小籠包”(xiao long bao)
There's always something new to learn on youtube comment section..
Thanks
Yeah, it's kinda stupid. Why would they call it 'bao'? The skin isn't even the thick kind. It would be better if they called it '大籠包' or smt.
Yeah I got confused when they said "different kinds of Bao(s)" when they could have just said dumplings lol
Thank you for the information, you're enriching my knowledge
and one of my favorites, bien luo :3
I am genuinely impressed in Chinese cuisine, so intricate and delicious looking 😋
You're going *deep* by hitting Jingjiang! I make annual trip there during the crab season just for the bao. This is really unique staff that's unlike any other tangbao you'd have elsewhere - Shanghai included. Definitely _the_ tangbao for me that sits above all.
When is the crab season in Jingjiang?
@@sophiay303 Roe in male mitten crabs, key ingredient in the tangbao, mature in mid November so the season for Jingjiang begins there and can last until mid January. It is when you'd find in various cities along the Yangtze groups of ladies extracting crab roe and meat by the street to make various dishes from tangbao to flatbread. Huge splash of orange and yellow and heaps of crab remains. Quite a sight.
Well, this is my hometown ! Can’t believe you guys went that far ! 👏

I feel like if someone ate this with a fork, they'll get beaten up for dishonoring the bao.
They’ll be kicked out of China and banned from all Asian countries. Try to go to an authentic Chinese restaurant in your area? No you can’t. The owner knows what you did
@@tmck4138 They have eyes everywhere, China will know and remember.

I remember my first soup dumpling. it was in an eat-all-you-can restaurant and I picked one up (it was already plated in the large steamer). It was just labeled as "Dumpling" but I picked it anyways. So me, never even seen one of these, tried to lift it from the plate and made it burst. Not only did I make a mess, I also burned my thigh and fingers.

There is a lot work that goes into this bao! The taste must be incredible! I have never tried this combination of flavor before 😊
crab roe and pork filling? Sounds amazing. I wish to try that one day.
While he explains @ 6:00, he makes 37 pleats in just the last frame, 41 combined frames. XD They're delicious no mater how many pleats they have though. I think what he's trying to say is to be consistent with the filling.
omg can't wait for the char siu bao video
To clear things up, Tangbao isn't just this specific dumpling, any dumpling with broth in it is a Tangbao, even the Xianglongbaos
This is the ART of Chinese cooking, literally you need a whole documentary to explain one Chinese dish for the westerners,
My Chinese master chef said to me before,:
"Every Chinese/Asian cooks can cook westerns food if they learned it, but not all westerners can cook Chinese food even if they learned it"
-Chef Tian

I’m going to China again just for this
Jingjiang is like 1 hour trip from Shanghai. This variant of tangbao is available exclusively to the otherwise featureless little town - other places in the region have different styles (lots of pork). Most Chinese natives had never heard of the place - it's a trip only for the most hardcore gourmet!
I need to try this, like really!
I have ate both of the things they said and let me tell you it great!!!
This is my hometown and I used to eat it often, it's extremely tasty. Now I've been living abroad for 16 years. Missed it sooooo much T - T
I’ve been learning Chinese since kindergarten (I’m in 7th grade now) and I still need the subtitles...😫
Don't worry. Spoken Chinese is less structured than standard/written Chinese. Simply put, people don't really care about the grammar. Plus the chef has a little accent. So there's no shame in needing subtitles.
And his great cooking skills aside, the chef really sucks at talking honestly speaking. Don’t learn his unstructured way of talking in Chinese.
Dam it look good I want to try this , I hope they have it in Vegas soon 😋
Never had a soup dumpling but this making me want one

Its cheaper than ikura roe i think
About 2 USD for one, but you can only eat it in JingJiang a small city in JiangSu, other city don't follow the same way to make it.
