Today, I will be showing 3 versions of fried rice: one that takes 5 minutes (soy sauce fried rice é ±æČčçé„), one that takes 50 minutes (Chicken fried rice 鞥èçé„), and one that takes 5 days (Yangzhou Chaofan æŹć·çé„) - each one is worth making on its own.

1. Soy Sauce Fried Rice (é ±æČčçé„) ingredient list
400 grams of cooked rice
2 tbsp of soy sauce (Amazon Link - geni.us/Rv53)
2 tbsp of pork lard
Diced spring onion for garnish (optional)
2. Chicken Fried Rice (鞥èçé„) ingredient list
To marinade and cook the chicken breast
280 grams of chicken breast
1/2 tsp of salt (Amazon Link - geni.us/66XyNr)
1/2 tsp of paprika (Amazon Link - geni.us/rt0ND)
1/3 tsp of sugar (Amazon Link - geni.us/G9A7ZG)
A few shakes of garlic powder (Amazon Link - geni.us/fvRMZuH)
1/2 tbsp of soy sauce (Amazon Link - geni.us/Rv53)
1/2 tbsp of Chinese cooking wine (Amazon Link - geni.us/ftCBDt)

1 tbsp of vegetable oil to pan fry the chicken
For the sauce
2 tbsp of soy sauce (Amazon Link - geni.us/Rv53)
1 tbsp of oyster sauce (Amazon Link - geni.us/PorSwS)
1 tsp of dark soy sauce (Amazon Link - geni.us/yhUSH)
2 tsp of sesame oil (Amazon Link - geni.us/Detwt)
The rest of the ingredients for the fried rice
500 grams of cooked rice
2 whole eggs
1 tsp of Ginger
1 tbsp of garlic
1/4 cup of scallion
5 oz of frozen vegetable mix
Toasted sesame seeds to taste (Amazon Link - geni.us/BU8Cs0K)
3. Yangzhou Chaofan (æŹć·çé„) ingredient list
600 grams of leftover rice
2 eggs
3 tbsp of cooking oil
40 grams of bamboo shoot, diced
40 grams of carrot diced
40 grams of pea
3 rehydrated shitake mushrooms, diced (Amazon Link - geni.us/nSZF04t)
3-5 pieces of rehydrated dried scallop, shredded (Amazon Link - geni.us/u5vIj7)
40 grams of Jin Hua ham, steamed and diced
40 grams of chicken breast, steamed and diced
1.5 tbsp of chinese cooking wine (Amazon Link - geni.us/Bhf1r)
40 grams of shrimp, diced
40 grams of rehydrated sea cucumber, diced (Can be replaced by fresh sea scallop) (Amazon Link - geni.us/2lWOiJ)
20 grams of scallions, diced
1 +1/4 tsp of salt

I love your szechuan fried chicken! My Japanese boyfriend loves spicy food and Iâve made this dish twice now. I slightly alter it as the spices are so difficult to find in Japan, but itâs so delicious, that I have made it again and again (I use the same spices just not as much!) I crank up the spice a little with store bought spicy red chili paste (a Chinese brand!) I add some togarashi peppers in it too and itâs AMAZING!
I donât have a wok but god would I be happy to have one! ;-; I make your recipes in a regular non stick pan!

Tips for simulating some of the "wok hei" effect on a home stove -
1. Cook ingredients separately before tossing everything into a final stir fry. Smaller portions require less heat to achieve the desired effect. You can even fry each ingredient separately, combine everything into a semi-final product, then do the final cook one portion at a time. Once you get into a flow, it doesn't take much longer than doing it the other way, and the end result can be MUCH better.
2. Specifically, really getting your rice nice and toasty can make up some of the difference, but you have to be careful. You have to fry it in smaller batches if you're making a lot, at risk of ruining the texture before getting your rice toasted. I can't give specifics because every cooktop is different, but it wouldn't take many attempts to figure it out for your setup.
3. Use ingredients that can handle a bit of charring. For example, you can char onion pretty dark before it develops a bad taste. Then, add some of the charred onion into your mix. Especially if you are using a sauce of some kind, you can add the charred ingredient/s just before stirring in your sauce. The smoky flavor from the onion will spread through everything and help bridge the "wok hei" gap for a normal home stove. I do this even if I want to use onion during the fry; I just char half and leave half to add later.
Good tips! The ingredient-by-ingredient method is authentic, I think mostly used in Guangzhou and surrounding areas. Your points on the rice are also important not to end up with a sticky mess :) Don't overload the wok, the individual rice grains should be 'jumping' on the surface of the wok if you're doing it right. If you don't have individual rice grains to begin with, consider starting again XD

For hot Chili Oil I actually prefer the "Chiu Chow Chili Oil" video by a German guy (Andong), a bit of work, but veryy tasty.
How could I forget hot chili oil? It's so good, even with some American dishes. Try a tuna sandwich with it.

Mandy! I have so many to choose from but I have to go back to the recipe that had me discovering you and knew you are someone I can depend on for other recipes, too. It was the Taiwanese popcorn chicken. Now I make it at least once every other week but usually once a week. And my boyfriend and I both look forward to the day of that week that we plan to make it. From the first moment I knew it was something special when it tasted as good as it was from the street market of Taipei (I followed your recipe to a T). My boyfriend also loves your sesame chicken!
