Hi Nicoli! There is no standard volume for a double shot. Depending on the coffee, it may be advantageous to brew with more or less water to optimize the flavor.
There is an internal pump that generates pressure for extraction, but you do need a way to move water into the machine. Generally this is done by connecting to the municipal water supply, which is under pressure. If the machine is drawing from a water reservoir (like a 5 gallon jug or something) then yes, you would need to buy a pump to move the water from the jug to the machine. Check out Caffewerks pump/accumulators on our website if you need one!
You can program the Appia Life Auto steam to finish at different temperatures, but you can only run one program at a time. In contrast, the Aurelia Wave has two programmable options per steam wand, as does the Eagle One.
One of worst machine. Have been using in our very low volume cafe. Absolutely horrible. Dose weight is very inconstant. So is auto programmed hot water. Extremely high steam flow. Water flow rate is no where near remmended. Mother board, lights and swiches broke in less than a year. They gave me unraised grouphead, and cups don't fit in. No distinction in model number when you order between raised group head. Highly NOT recommend.
I have had good luck with this machine. It is installed in our mobile truck. It keeps up with our volume much better than our single group Apia did. I’ve had no troubles with this machine.

The tape probably won't withstand the heat and water very long, but it won't hurt anything.

No, it will not. It will operate continually regardless of temperature.
