My Fresh Hop Beer Did Not Turn Out Good

  • Sometimes a beer just doesn't turn out the way you want it to. Has this ever happened to you? It's unfortunate, but remember, you can always brew another. Come along for the ride while I brew, a bad beer.

    It happens to us all my friend. I had to dump a raspberry jalapeño wheat ale. It had a terrible taste that I think came from me not properly killing whatever lived on the peppers before adding them to the beer. Like you said it just means we get to brew again.     I've had to dump a fresh hop beer once - surprisingly not a fermentation issue. I just harvested the hops too late, so the beer was pretty much oxidised to start with. Like making beer with old tea leaves... Knowing when to harvest the hops is a bit of a skill learned over the years.
    I do a couple of fresh hop beers each year, and often end up having to do at least one batch at ambient temp. I have four different hop varieties growing, and sometimes multiple are ready for harvest at the same time. So lack of temp-controlled fermenter space means some just get a bucket fermenter in the garage. I've taken to using Kveik yeast for these. Quick turnaround time and not temp sensitive.
    I think the best fresh hop beers, even IPAs, are made using lager yeast though. Keeps it crisp and really lets those fresh hop flavours shine.

    It sucks… hello for New Zealand. My fresh hop pale ale with my home grown Riwaka and Cascade went down the drain 😥 Not sure what went wrong but it just wasn’t right…. Hurts even more when it’s fresh hops from your own harvest, as I now have to wait a year to try again 😔

      Someone who truly understands my pain. Sorry to hear that it didn’t work out for you this year! It really is tough when it’s the fresh hop beer that doesn’t work out, and you have to wait another year to try again.
