Thanks for the beautiful video :) I made a season (french) I really hate it. It is like bad beer, like mud. I'm brewing about 5 years but never liked french saison. Should I try other yeasts? (not french ones)
Appreciate the kind words. I would consider Saison to be an aquired taste. Having tried a French Saison recently I would say it still has a similar yeast flavor.
In fact, it's funny that you mentioned your beer tasted like mud, because when I googled "what does saison taste like" one of the descriptors was "soil".
My recommendation would be to try a classic Saison like the Dupont Saison. If you enjoy that I'd say give it a shot again with a different yeast. Another thing you could do is ferment it at the lower temp that's recommended for the yeast strain of your choosing. That will help suppress the esters more than if you were to ferment it in the hotter range.

Saisonstein is so good, strawberries seem like a good combo. I'm surprised you didn't add them post-fermentation though, I usually add raspberries that way and the beer comes out crazy pungent. Then again, raspberries seemingly always come through more than strawberries. Something to try for next time :)
Definitely wasn't dissapointed with Saisonstein, it did a rock solid job and left that wonderful farmhouse flavor. *chefs kiss*
Oh yeah, I took inspiration from Clawhammer Supply on when to add the fruit additions. Besides the mess it worked out really well. No need to sanitize the fruit since the boil did that for me.
Not a bad idea on adding it post fermentation. Do you do anything to purify/sanitize your fruits before adding them?
How did you prep the strawberries
Cut them into halves, that’s about it.
