How to Make Sourdough Starter in 4 Minutes (Pineapple Juice Sourdough Starter))

  • Four minutes spread out over 5 days - but still it's easy and it works. This starter is the first step in baking sourdough bread.
    I've made many starters over the years and this recipe has worked every time. In future episodes I'll teach you how to feed your starter and how to make a loaf of sourdough bread with this starter.
    For the SOURDOUGH STARTER, you will need:
    - Unsweetened Pineapple Juice
    - Flour
    - Purified Water (distilled is fine)

    There’s all kinds of flour. Which did you use, or which do you recommend?

      I've used all sorts. Bread flour gives the biggest rise, so that's generally what I use. But I've also had great results using whole wheat, rye, pastry flour, all purpose flour, almond flour, rice flour... Start off with all purpose flour or bread flour. After you get good, definitely experiment with other flours. You'll find lots of great texture & flavor variations. Some won't be great. But it's still fun!

      quiltnanc wait until day 6, after the day 5 feeding takes full effect, making the starter bubbly.

    What do you do if you can't bake on day 6? Put it in the fridge and keep feeding it?

      You can put it in the fridge or leave it out. If you leave it out, generally feed it every other day. Or every 3rd day depending on your use. Honestly, I've left starters on the counter for weeks without feeding it, then brought it back to life after a few good feeds. If you put it in the fridge, you won't have to feed it but once/ week or once/ 2 weeks. Same thing applies though - you'll need to give it a few good feeds to get it back to baking condition. Hope this helps :)

    Ty the first one I ever made worked great the only one to ever work for me. After using it and adding then stored In fridge and went to acetone. Every one made after that smelled like acetone 😞 I just can’t make it again won’t work for me with water or pineapple but at least I made it once with your method ty

      Hi I've heard the acetone gets produced in high temperatures. The yeast eats up all the sugars and stresses out. Try feeding it twice a day. 😉

      acetone smell means you are not feeding it enough

    Can i use squeezed lemon/lime instead?

      I don't think so. I've never tried it, but they're more acidic. From my research, everything says pineapple juice specifically fosters strong bacteria growth because of some kinda science thing i failed to understand. Something the way sugars in pineapples react to air and bacteria.

    you made a monstrous sourdough starter lol, should have discarded most of it before water+flour day no?

      It's a big one, but I use a lot of it and always give some away. I don't discard any starter until day 6, when I feed it. I'm sure you can reduce the portions as long as you keep the same ratios.

    When you came to day 3 I could not hear what you said........you just held the jar and looked at us mumbling something...........did you say to do the same as day 1 and 2 ? ......just not clear....????

      I'm sorry that was muffled. On day 3, do nothing at all. I really need to work on my audio production. I've never been good at audio.

      I guess we'll never know... Fresh pineapple juice works even better than the canned stuff. I've also used fresh apple juice and it worked great.
