I decided to leave LA and return to Rochester to be a full-time CZcamsr and I'm off to a VERY SLOW start! I make a new short video every day of this quarantine, and I have zero idea where this thing is gonna go. But I'll keep making them until I run out of ideas. Please check them out. The Summer of Rubble
As you know, Telly & I rarely bite off a typically chewable size of project at a time. This spring, we stuffed our entire kitchen right down our beer holes.
The longer estimates landed just north of a month.

Telly & Ryan married on June 25th, 2022 in Sonny & Grace's backyard in Pittsford, NY. The glorious late-June day almost satirically flaunted every fancy of ideal. What do you do if you can't bake on day 6? Put it in the fridge and keep feeding it?
You can put it in the fridge or leave it out. If you leave it out, generally feed it every other day. Or every 3rd day depending on your use. Honestly, I've left starters on the counter for weeks without feeding it, then brought it back to life after a few good feeds. If you put it in the fridge, you won't have to feed it but once/ week or once/ 2 weeks. Same thing applies though - you'll need to give it a few good feeds to get it back to baking condition. Hope this helps :)

Hi! Thanks for watching. Keep the starter between 60-80 degrees. Mine's in a glass jar with a piece of cloth covering it. I feed it every other day. I keep it in the fridge when I don't make bread for a few days. On day 6 you can use it to make a loaf of bread. Even if you don't, feed it on the 6th day. Feeding = pouring half your starter out & adding more flour & water. Since you're discarding starter, you might as well use it to start a new loaf. I used to measure the water & flour to the gram for feeding, but you can just eyeball the consistency. You want a consistency somewhere between pancake batter & peanut butter. There's a lot of wiggle room.

I'm sorry that was muffled. On day 3, do nothing at all. I really need to work on my audio production. I've never been good at audio.

Why do we have to discard before feeding? Can we just feed without first discarding? Thank you
If you don't discard, you'll have to add increasing amounts of flour & water to maintain the feeding schedule. The starter will eventually get enormous.

Sorry it took me so long to reply. You can feed without discarding but then your starter gets bigger every time you feed it & eventually you'll have to use lots & lots of flour. And find a space for the giant bubbling monster.

It's a big one, but I use a lot of it and always give some away. I don't discard any starter until day 6, when I feed it. I'm sure you can reduce the portions as long as you keep the same ratios.

Sure thing! I should probably put this in the description area of the video. 150g / 5.35oz. of Starter 250g / 8.8oz. of Water 500g / 17.65oz. of Bread Flour (all-purpose flour will work, just not as well) 1 Tbsp of Salt

I guess we'll never know... Fresh pineapple juice works even better than the canned stuff. I've also used fresh apple juice and it worked great.

There’s all kinds of flour. Which did you use, or which do you recommend?
I've used all sorts. Bread flour gives the biggest rise, so that's generally what I use. But I've also had great results using whole wheat, rye, pastry flour, all purpose flour, almond flour, rice flour... Start off with all purpose flour or bread flour. After you get good, definitely experiment with other flours. You'll find lots of great texture & flavor variations. Some won't be great. But it's still fun!
Ty the first one I ever made worked great the only one to ever work for me. After using it and adding then stored In fridge and went to acetone. Every one made after that smelled like acetone 😞 I just can’t make it again won’t work for me with water or pineapple but at least I made it once with your method ty
Hi I've heard the acetone gets produced in high temperatures. The yeast eats up all the sugars and stresses out. Try feeding it twice a day. 😉
acetone smell means you are not feeding it enough

YES!! And I miss them all! I always make Country Sweet my first visit everytime I go back to Rochester to visit my family. But I think they changed their recipe. This year I tasted more vinegar and I think they removed the high fructose corn syrup.

I made my first starter from your videos. I used wheat flour. When it came time to make a loaf, I added Flax seed and. handful of sunflower seeds on top. It’s amazing! I’m so proud! I wanted to post a picture here, but can’t figure out how to do that. Thanks Ryan!!!

Would you recommend adding the cornstarch while sauteing the onions? Tsp? Tbsp? Use the bacon fat and flour to make a rue instead? I dont know. I am going to ruin these this weekend.

i never use corn starch in anything hot. I always mix it in a tiny bit of cold water and then add it. Did it work?
