I've had lemongrass chicken before from Vietnamese restaurants, and I've been looking for a recipe that gets as close as possible to what I've eaten. I think I just found it.

Great recipe Donal - I've cooked it a good few times. I added some Asian fine (string) beans for a bit of crunch.

Hey Donal, made this tonight, thanks for the recipe!! So easy to do and so so tasty too. I had to use light soy sauce instead of fish since we ran out. It was still really good but I can imagine the different dimension that fish sauce would add!

So one of my friends mother makes this lemon grass chicken dish and it's really good and I wanted to recreate it without asking her. I knew what went in my the taste of it, I then decided to research it online and came across this recipe! It sounded exact like how the dish taste so I decided to try out your recipe Don! This dish is absolutely magical. I substituted regular sugar with palm sugar, which added a caramelised maple like flavour. Overall I knew you wouldn't let me down with another great dish.
