If I feel like some eyes I’ve used are a lil too “cross eyed”, would I use this method to move them outward a bit? Or how exactly would I correct that? P.S. your vids are great! I’ve learned so much. Thank you

You would want to move the actual mesh, not the UVs for that. :)

Sure, just split the two eyes by selecting just one of the irises then do P>separate selected and then delete the material off of one of the eyes and add a new one with the different eye color before you join all the meshes back together on the head. It'll give you two materials to use and you can animate them separately in Unity as well!
