- There seems to be mixed opinions on eating Aussie Salmon or Kahawai as they’re called in New Zealand. To be honest I don’t really mind them and this was my first time smoking one. A simple dry brine of brown sugar and salt nothing fancy, I was super impressed. Made an awesome lunch I can’t wait to play around with this a little more.

I like the sawdust trick. What type of wood did you use?
Works pretty good mate, it’s a log from some type of gum not 100% sure what something like red gum though smoke from it is awesome

how many hours did you smoke it for?
Not long mate max hour and a half maybe. These days I only do thighs for 30mins-1hr tho fish doesn’t need very long at all

Hahaha cheers, still working on perfecting the actual smoking/burn part esp for a cold smoke. But the hot smoke worked well mate! Awesome crust and penetrated all through the meat

At last a place to comment about smoked salmon. I got some smoked fish in Woolies, and it tasted taste-LESS and was slimey, grotty and generally no taste no-good stuff. I was disappointed. I had thought there would be tastey nice fish Did I expect too much, or is this not the way it should be? I am very interested because anything from the sea is so good for you.
