Island Trevally Sashimi | Spear, Clean & Cook

Today we are using Island Trevally, otherwise known as Thick Lip Trevally, or False Bluefin Trevally to make sashimi with horseradish mayo and ponzu sauce. I was stoked to finally find some of these guys at a decent size I couldn’t wait to use some horseradish from the garden. Believe it or not horse radish is likely what you’ve been eating whenever you’ve had “Wasabi” from the store. It is far easier and cheaper to grow, while still being from the same family and having a relatively similar flavour.
