That’s so special. It is similar to what happened to me this year. I lost my dad almost a year ago. He wasn’t able to garden for at least the last ten years. Well, in his basement I found seeds wrapped in tin foil, labeled “pink” I couldn’t wait to try and see if they’d grow this spring. They did! Now the plants are over 6 feet tall and producing beautiful pink tomatoes. It’s like a hello from dad! 🍅🍅🍅

I enjoyed this talk. My kids laugh at me when I exclaim "I grew that!", at dinner. But secretly I think they like it 😉. It's like a big hug from me to them 🤗. I know my husband appreciates it. It's worth it to me. Plus being in the garden helps me mentally and emotionally...which is good for EVERYONE in the house 😄.
I moved with my mom and dad into an independent living senior community apartment from a 2800 sqft house. I've slowly been getting things to use in case things happen. If the power goes out, we won't be able to use the electric stove. I just ordered a one burner butane stove. We have an emergency bucket of freeze dried food. I'm working on stocking up on things as I can afford it.
I would love to hear more about the broken food system, the more it’s spoken about the more people realise it’s not good enough the way things are. Thank you for talking about it 😊

I started learning to freeze, can, and dehydrate this summer. I also plan on looking into fermentation this fall. I have two chest freezers dedicated to preserving garden and bulk purchases. I started gardening last summer. My summer and fall gardens were a disaster, but I learned a lot from them, and applied what I learned this spring and summer. So far, my spring and summer garden has been a success, and I learned more about how much to plant, and when. I am transitioning into fall season crops, and I am 100 percent sure it will also be successful, and I will grow on that success. Also, with each season, the soil biology will improve, and the yields with it. My one regret is that I didn't start gardening one year earlier, so I would be more prepared for the looming crisis, but I am much better off than those who don't have experience with gardening, and think they can feed their families by simply dropping a few seeds on the ground and watering them. It has taken me a few seasons to get moderately successful. This year, I have mainly been focusing on experimenting with different plant varieties, to see what I like, what grows good for me, and how much I need to grow. Next spring I will still be experimenting with different varieties, but I will also be gearing up for production. I have five raised beds, An arched trellis that is eight feet long, between two of the raised beds, a feed barrel that I cut in half, and about thirty grow bags, ranging from 10 gallons to 30 gallons. My goal is to produce enough food for two, growing at least 10 months out of the year, year round if I can. I will be covering all of my raised beds with low tunnels to extend the growing season, central Alabama, 7B.
I'm new to homesteading, but I so appreciate how you addressed the broken food system. I'm one of those weirdos who's body literally cannot tolerate the American food and pharma system. The things I'm allergic to are the basic building blocks of ultra-processed food and easy treatments for basic illnesses. So growing an preserving food has become so important to me. And the more I learn, the more motivated I am to learn from you and others who are years ahead of me.
I agree with everything you said. I love gardening and growing because that’s how I grew up. I also hated going out to weed or pick. I didn’t like the heat or the bugs 😂 but it’s some of the most precious memories I have. I want to pass it on. I hope more people go out and grow and take in all the beauty and the excitement when you see your seedling with a flower on it or a vegetable growing. It never gets old. It’s like walking up to a pile of puppies! Lol. There’s always new things to learn and I live trying new things all the time. I’m actually about to try growing my own scoby because I saw yours 😂 I’m so excited!

Nice to see that you are feeling better. Cut some time on cutting that okra and cut 3 or 4 at the same time - them knives have pretty long blades and can handle it - LOL. And a little thing I do when I'm cutting a lot of okra. I get a tall glass full of crushed ice and stick my knife in it a few minutes before I start chopping. Take it out, wipe off any water with a clean dish towel and start chopping. When you see that the okra is starting to goo up on your knife after a while, stick it back in the ice for a minute, wipe and keep going. Keeps it from getting all gooped up.

I'm relatively new at gardening. Currently where I was giving a lot away bc I didn't know how to preserve.
I took R&R advise this weekend and went to our farmer's market and bought a 25lb box of tomatoes and spent the weekend canning for the first pasta sauce and salsa. Got 6 quarts of each.
Today.... I made basil pesto from the abundance of basil we have.

Such a good talk. I spent years giving away far more than we ever ate out of our own garden and felt like why am I doing this. I like sharing but this year have finally learned to preserve food and its been amazing the amount of food I am putting away without changing the size of my garden at all.

About five years ago I bought a fresh pineapple from our local grocery store, I cut the top off and put it into a glass of water. When it started to sprout roots I planted it. This Spring it produced (a baby) another small pineapple plant. Today I noticed it had a flower! Is this the beginning of a new pineapple?! I'm in Boston Mass.

Yes! For us, preserving food means just having good foods on hand at all times. I simply cannot eat processed foods. I have a list of like 30 different ingredients I cannot eat because they cause basically a poison reaction in my body. Imagine if someone with celiac disease was glutened and you’ll know what I’m talking about. So I have to make nearly everything we eat from scratch. Which means I need to preserve a ton of food so we have enough to get us through until the next season.

The take away for me is knowing and understanding your why for what it is you want and are doing regarding food. 🥰 also for me a part of the decision making process in choosing which process is in regards to the taste and texture of the food with each process. Example, my husband likes canned green beans better than the frozen. He also does not like the texture of rehydrated vegetables that have been dehydrated etc..

I’d love to see you cook from all these preserved food. I mean i -for one- don’t know how the freeze dried veggies behave when you cook with it, moisture and texture-wise. I dehydrate my herbs upon picking, but freeze everything else that I preserve. Next year I want to start canning, but right now it’s not possible. No safe place to store yet - pantry will be reorganized for shelves for canned food over winter.

I have made jams, jellies and relish for years, plus bottled fruit. I have been using my small dehydrate more and more. I would love a freeze drier but to get one to NZ my fried has been quoted over $US5000, just for the small home version. I would love to do pressure canning also but they are at least $NZ600. I will have to stick to the basics. I am going to try fermenting some things this summer to see what it is like, but I suspect my family won't like it.

I like to preserve using canning methods and freezing, and this year...I bought a dehydrator. My pantry is already full of jams, jellies, beans, pickles, soups, and soon.....my tomatoes heehee

For me growing a garden, buying beef from our friend who raises cattle and our own chickens and eggs, I know I am not getting tainted foods or foods that are modified. No thank you! Lol

I’m struggling with wanting to try different things. But don’t have a whole lot of space so like I only planted 2 okra. I’m then struggling with how do you store these few okras til I get enough to pickle or do something with them 🤦♀️🤷🏼♀️
I throw what I pick into a gallon ziplock bag and freeze it and add to it daily as it's picked. I like it frozen whole because it tastes freshly picked when you cut it up to use. Just slightly rinse off and cut while it's still thawing. So good!

Other than dog food it hasn’t been hard to find food. We don’t eat that much so that helps.

I don’t understand the difference between freeze dry and dehydrating
Freeze dry freezes the food and then pulls all the moisture out to where the food can last 25years but retains almost all nutrients.
Dehydration heats the food to dry it so it looses half the nutrition and only last a year or so.

IMO food preservation is part of homesteading.
homesteading should be a way of life, not something done in fear of "system collapse"
when you go about learning and implementing homesteading skills, you have food security and don't worry about supply chain issues. Because you don't NEED the modern supply system.
I’ve done both….I retired from my teaching career and started expanding my Garden and preserving a lot of food. I have eliminated almost all processsed food from mine and my husbands diet to take control of our health. I think living this lifestyle may be physically demanding, but so was being with 27 five year olds all day. And as much as that was rewarding, I am so much happier with my life now and feel completely fulfilled. I have hobbies that i do in the cold months, so i keep busy. I wish everybody could experience a week in the life of a homesteader, and they’d all be buying land. We weren’t meant to run this rat race. We, women, were meant to raise and nurture our babies. I’m sure I’m going to get some hate for that, but that is how i feel. I have never, and will never be a feminist. My generation shot itself in the foot with that feminism nonsense. Now they’re all miserable working their tails off and since the dawn of social media, you don’t even see family anymore.
