    For those confused
Coconut water = the water found inside of a coconut
Coconut milk/ cream = coconut flesh blended with either its water and/or regular tap water. Different thicknesses are obtained by a higher coconut flesh %
Creme de coconut = sweetened coconut cream and heated to thicken
Sweetened condensed coconut cream = as above but the milk version

As far as I know, coconut milk is a liquid obtained by pressing grated mature coconut flesh. I had helped my mom made it when I was a kid, now I just buy canned one for it's convenience.
Mature coconut flesh is rich in fat but it has fibers in it. If you just blend it, you get those fibers too.

In the 70s and 80's before it was easy to buy coconut milk at the Asian market, my Vietnamese mom would buy whole coconuts, crack them with the blunt side of a cleaver, drain the juice into a bowl or just give to us kids to drink while we watched. Then she would break apart the shell to remove the coconut flesh and put the chunks into a blender to extract the coconut milk which she would strain with a sieve. This milk she would use to make all kinds of delicious desserts.

The Thai Kitchen in the carton is actually better for curries than the canned one because the canned one has thickeners in it. When you look to buy a coconut milk for curries, look for one with just coconut and water. Cartons are usually your best bet.

Here in Indonesia coconut milk is mostly being used as an ingredient in savoury and sweet dishes or in other words you usually have to process it first before consuming. Therefore it’s kinda uncommon or even rare to find coconut milk that refers to a milk that works as a dairy substitute (something you can drink straight up like a glass of dairy milk). But when I found out about the varieties that exist abroad I realized how confusing the term can be because ppl have different ways to use it haha. Where I live we only get two little cartons, of the same brand, of coconut milk and thick coconut cream that are the same size and cost basically the same. So whenever a recipe calls for milk I buy one tiny carton of cream and dilute it with equal parts of water, works perfectly for half the price

where i come from, we get the meat of the mature coconut ground up in the wet market, and then add a small amount of really hot water to the ground up meat and squeeze (u can use a strainer or cheesecloth) to get the coconut milk out :)

I actually know the difference between all of them because I use them a If it calls for cream of coconut, I use coconut milk and just add sugar. Generally I use the canned coconut milk that has the cream on top for most stuff or coconut water of course just drinking.

Im honestly glad I live in a tropical southeast asian country cause we p much only have coconut milk for cooking and coconut water is fresh coconut water or just flavoured so (and its clear).. so these things dont confuse us.. but also if anyone wants coconut milk for cooking (not for drinking straight) if you ever do get your hands on an OLD (brown, green/young coconuts are for drinking water and eating pulp) coconuts, if you have a shaver, shave it down, if u have access to preshaved coconut (which I think many ppl do cause u sprinkle it on foods etc) just soak kt woth a bit of water (maybe like 2:1 or so or 3:1, just make sure what consistency is good) and then you put it through a milk bag and there u hve good coconut milk ready for cooking

We used to buy cream of coconut in a sold block form like butter. It wasn’t sweetened and would melt just like butter when used as a cookery ingredient for savory dishes. I now use tinned coconut milk for the same purpose, but I don’t care for how it separates in the pot, and it doesn’t have the richness of coconut taste that the other had. Now I’m considering, maybe I should check in the freezer of an international market to see if the other is there.

In the states they call this coconut oil. It is indeed solid but sold in jars. It would be far more convenient if it was sold in blocks and given a different description. Never the less that is how it is marketed here.
