- Happy 2022 Everyone! We hope that you all had a lovely restful Christmas and are ready to get back to baking! We thought we would start off 2022 mindfully with this delicious Chocolate Granola Recipe. You can eat this with some yogurt and fruit for a hearty and healthy breakfast that will fill your body with all sorts of goodies and keep you going until lunch.

Here is the recipe that Sally makes but see below for a few different options
Preheat Oven to 140C
100g Oats
50g Puffed Rice
100g Pecans
100g Flaked Almonds
50g Flax Seeds
50g Sunflower Seeds
2 tbsp Cocoa Powder
1 tsp Salt
2 tsp Vanilla Extract
100g Maple Syrup
100g Coconut Oil
Nuts: Total of 200g
Almonds, Pecans, Cashews, Hazelnuts, Brazil Nuts, Peanuts
Seeds: Total of 100g
Sunflower, Pumpkin, Sesame, Flax
If you don't fancy the Chocolate Granola you can leave the Cocoa out of try adding 2 tsp of Cinnamon!

Hiya, dietitian here. All salt is salt. There’s tiny amounts of minerals in sea salt but they’re negligible so it doesn’t make it any better. The amount of salt per portion in your recipe would be comparable to a lot of shop bought granolas. And your portion size would still only be a about 1/6 of a teaspoon so across the day would be fine in terms of sodium content.
To make it a fully chocolate granola you could use cocoa butter instead of coconut oil. Same sort of ratio of saturated fat to coconut oil.
Your granola is the best one. I baked so many times and always triple of the ingredients every time. It’s just delicious.

I hope isolation went well for you both and you all are safe and healthy. My roommate caught it a few months ago. It’s a little scary, not only taking care of and worrying about the sick loved one, but trying to not get sick yourself while you’re trapped isolating in the same house. Thank you, Sally, Sam, and Nikki for sharing this with us.
Your granola recipe is just amazing. I cooked 3-4 times in double of the amount. I just love it this is my favourite cereal
Non-Fat, high protein Greek yogurt with some preserves, little bit of peanut butter for fat, salt along with granola (100g worth per meal!) is how I was able to come back from anorexia and maintain my nutrition. To this day it is my staple meal and has been the primary factor (as well as weightlifting) in my physical success. I would love to see more granola recipes like this as well as some other yogurt toppings/mix-ins!
For those interested... it averages out to a 600 calorie meal and works brilliantly for staying sated long enough for intermittent eating. I also add in some cinnamon for warmth and flax seed. Strawberry rhubarb is my go-to preserve. (:

It's really simple and delicious. Chocolate really makes the granola tasty. I am using true elements dark chocolate granola from past 6 month. You should also try as a healthy breakfast.

I love granola and am constantly tweaking about my recipe so will definitely try this one!
My OTHER favourite make-ahead oaty breakfast is baked oats. If you swap out the oil for milk and add some baking powder and an egg or two you could make a lovely dish of baked oats to slice and freeze! Two minutes in the micro, splash of milk or yogurt and you've got a really filling, protein-rich breakfast that'll keep you going all morning!
Hi Sally. To have even more chocolaty taste, you can also add cocoa nibs and/or chopped chocolate 😋

I love making this. Its always something great for breakfast when I'm in a hurry. I dont add lots of salt as I can taste it. I tried with cinnamon but wasn't the same. Definitely a life long recipe for me.

Excellent video Sally. There is a French Cottage Restaurant that made their own granola. They would serve it at their Sunday Brunch. It is amazing. Crunchy with that slightly sweet and salty taste. They would place a small amount of it into a beautiful baggie with a bow and send it home with you after your meal. It was a maple cinnamon flavor but this chocolate one would be delicious. I have been making my own yogurt using my Instant Pot and it is so much better than store bought. This will be on our breakfast table this weekend. Thanks so much. You look very nice wearing pink.

Maple syrup is sugar, but yes it's much less than most you get at a store

@@priyalkokate9731 I think we’re a little mixed up here. Those things are not all equivalent. Maple syrup isn’t any better than regular sugar, they’re both sucrose and will raise your blood sugar. They’re both equally bad for diabetics. Stevia and artificial sweeteners are okay for diabetics because they taste sweet but don’t actually have any type of sugar (no sucrose, glucose, or fructose) so they don’t raise your blood sugar. That doesn’t necessarily mean they’re healthy, but that’s a different discussion.

I add white, milk, and dark chocolate chunks when want to be extra decadent or give some as a gift. otherwise, I just add small extra dark chocolate chips or cocoa nibs for extra chocolate flavour

Just RE your comment on ‘gluten free’ oats - quite often coeliacs also react to a gluten-similar protein in oats as well.
Unless a coeliac person has done a test for oat sensitivity it’s usually a good idea to find a substitute!
In some countries (like Australia) ‘gluten free’ oats aren’t a thing due to supply chain contamination, even if they are imported and products that contain oats aren’t allowed to be labeled as gluten free (even if they contain no gluten!).
Salt is salt..... most of it will be NaCl anyways (and some are iodized also for health)..... but it wont be bad because its soooo little salt used over a lot of granola...so unless you eat kg of it, it wont really matter (and well...then salt isnt really the issue anymore)

Yes. Rice Krispies are the same thing as puffed rice
