For those curious, Chef Martina thickened her Panna Cotta with wheat starch, though she said she often uses corn starch as well. You can also thicken Panna Cotta with gelatin, which gives it a slightly texture a little more like Jello than pudding. Because of the amount used here, the consistency of the Panna Cotta once it cools is *chefs kiss*. Enjoy!

This is made very similar to a Puerto Rican dessert known as Tembleque. It is made over the stove as you did this one but with cornstarch, coconut milk, cinnamon and sugar.

4 cups milk , handful almonds and sugar , 100 g constarch , honey to measure, pinch of sea salt and cinnamon, teaspoon of almond extract.

This looks a lovely dessert, Shaye. Very like your Jello pudding packets, so loved in the US. As you know, the Italian translation of Panna Cotta literally means cooked cream, so in that spirit I'll alter the recipe to use the cream instead of milk. Corn starch will help to avoid the gelatine too. Thanks for sharing ...I can't wait to try it out.
This consistency (in my head) would be so much silkier than the gelatin panna cotta

I will be trying this! I always thought panna cotta was difficult. This version couldn't be easier. Where did you order the almonds from?
Is sweet almond oil the same kind of almond? or is sweet almond oil something entirely different.I have a bush that is named a sweet almond and beneficials adore it but no nuts, just slightly sweet smelling flower bracts. The smell is strong but I didn't know if it was edible, related to an almond tree, or is it possibly the leaves that they press to get sweet almond oil? I will certainly make your lovely dessert soon. How can it possibly not be delicious?
