I’ve never done any of these methods - definitely going to try your boil ( steam method). Have you ever tried water glassing the eggs? I’ve seen some videos on this - if you have, your pros and cons? I don’t have a freeze dryer so I guess I’d have to try the container in the freezer thing .
You should look that up again about floating eggs. I always threw out eggs that floated...until I found out that MOST of the time they float, they're still good! Instead, separate all that float. Then use them up ASAP. Crack them each separately in a bowl and do the sniff test as well as a visual test. If they look or smell bad they are bad. If not then they're fine. I eat these all the time and my family.
In our last house we had wild ducks and I would find their eggs everywhere. I used them to make a chocolate mousse for my husband's family. They loved it until they found out I had used duck eggs and then they quit eating it!!! I also would give them to the Vietnamese gal who does my yearly pedicure. She almost cried; she loved them so much!!!
Duck eggs make great egg noodles, I am Cantonese Chinese. We ate salted preserved duck eggs, duck eggs have thicker texture and are great in a lot of dishes! Glad to know you get to used them :)
I freeze dry our eggs just like you but I also freeze dry my quiche liquid, (raw milk, eggs, real salt, pepper, pinch of freshly grated nutmeg) Give that a quick mix and freeze dry. I also freeze dry the whatever veggies and cheese that we could add separately. Super quick quiche or frittata that even my kids can throw together. one of my favorite things to do with the boiled eggs after peeling them is to put them in pepperoncini juice not only does the white turn a cool yellow color but if you like spicy and pickly flavor you'll love pepperoncini eggs!
I found that putting the trays in the dryer, then pouring the egg mixture into the trays is easier than carrying the trays to the dryer. I have duck eggs drying right now. Love it!
Thanks. Will try this. I did my first batch of eggs on trays and carried them downstairs with lids for the trays and still managed to spill a bit as I put them into the freezer. Next time I will do it this way - right in the unit. Did you still pre-cool the unit?
@@JoAnnBlondin Yes I did. This also works well with milk products or any liquid. I learned the hard way 💯 I am not as steady as I use to be 🤭 I figured out for us that 8 cups fill 2 trays, so those 8 cup measuring bowls with pour spouts are very useful. Good luck and onward we go!
I sell about 10 dozen a week to co-workers, give some to family and have 16ish dozen freeze dried on the shelf now. I'll put another batch in the dryer this weekend. NOT complaining at all
First off, I love your videos. I’ve learned a lot about food from you. And I also want to mention that your music is so enjoyable. The only thing I ask is if in the future you can give us a little more close-ups of cooking. When you’re adding something or mixing something it would really help to see close at hand into the bowl what it really looks like in consistency. Otherwise your videos are perfect!
Other ways to preserve eggs…freezing in ice cube (but larger size) silicon trays. And freeze yolks separately on waxed paper/cookie sheets. Then put into vacuum sealed bags (Zwillig brand is what I use) bought on Amazon. Not everyone can afford a freeze dryer. Glad you showed an easier way to hard cook eggs (not hard boil). And not to wash eggs before preparing. Thank you!
Have you ever tried just putting empty trays in the freeze dryer and then pulling them out a little bit and pouring your eggs on the trays? Works a lot easier and no mess.
Admire the way you carried those eggs down to the cellar; it was all I could think about as you poured them into each tray, I’m such a klutz I would have most definitely spilled them 😁 Love the idea for the x on the cooked eggs! Thank you for teaching this 52 year old how to successfully hard boil eggs. Im giving up on boiling and doing your steam method. Also your peeling trick (rolling first) worked like a charm. Im throwing out others’ recommendations (vinegar in water) that simply didn’t work.

I love your curtains especially at this time of year! I’ve just gone and done my own eggs now that you’ve inspired me! We have bantams so hard boiled bantam eggs are a great snack for our little kids! Much less wasted!
Lol...I also do George Washington eggnog starter...alcohol, eggs, and sugar. Add the rest when you are ready to drink, but needs 5 weeks or so for the alcohol to kill off any undesirables, so I let it sit in my pantry. Can use for pancakes or waffles, alcohol cooks out.
At Aldi, of all places, they were selling a beautiful multi-colored dozen eggs, and it said right there on the packaging, "Insta-worthy yolk, no filter needed!" I thought that was hilarious... I bought them because they were pretty and the yolks were the color of steamed carrots! I was impressed for a moment but wondered if they had just fed the hens something... sure enough! We will have our very first gang of backyard chickens later this spring; I can't wait to finally have my own home-grown eggs :)
If you put your trays in the freeze dryer and pull each pan out about 1/3 of the way and then pour the eggs in it is easier to get the eggs on the trays with less risk of spills.
What a fantastic video! We are in the city and not big egg eaters. If ever we were to have laying hens, I feel ready now that I've seen your video! One comment, I've seen a 1:1 ratio of water and freeze dried egg in other references, but by volume not weight. This makes sense to me because the freeze dried egg will be super light in comparison to water. The 1:1 weight ratio used here makes the reconstituded egg much thicker, but you've resolved it with an extra splash of water.
Ive just ordered a freeze dryer, and anxious to start using it. I wish you had shown the egg reconstituted closeup, and also side by side with the fresh scrambled, then made into an omelette. we pre-freeze ours which makes it much easier to deal with so I don't spill them everywhere lol. I do about 18 eggs per tray and pour them right into the tray that is sitting in the freezer. Oh and don't toss the shells. Save them and crush them up and give them back to the chickens.

Before I watch this here is a few things I do with my eggs mayo, egg custard pie, quiche, salted yolks, meringues, lemon curd, mouse, macaroons, ice cream and custard
Are you composting the egg shells? My granny taught me to save them and put them in the garden, especially around tomatoes, for much needed calcium. She also have the chickens oyster shells to peck on to help the egg shells to be stronger and put more calcium in the eggs.

whenever I see eggs on sale, I make 2 to 4 quiches at a time and freeze them. Then just make a batch of biscuits and put the quiche in the oven and .... easy peezy no fuss dinner in a flash
We just ordered 49 chicks and are so excited for farm fresh eggs again, we are a large family and go through around 6 dozen a week so I don't know if we will have many leftover but if we do I'll be referring to this! 😍

In Germany eggs are traditionally preserved hard boiled in a salt water brine with spices to taste. Prior to putting them in the brine the shells are cracked to allow the salt to penetrate the eggs.
I still have yet to produce yolks like my mom’s chickens growing up. They were the deepest red orange and so THICK and creamy. Best tasting yolks I’ve ever had. Probably had something to do with the barn mice they would pack hunt and dog food they would steal.

The freeze dried process could be easier if you took the trays down and the bowl full of mixed eggs down and then, poured it onto the trays. You can use the hard boiled eggs' water to kill weeds.
I fill my trays after i take them downstairs. I will spill all over the place if take them downstairs full 😂 My freeze dryer takes about 50+ hours to dry them. We freeze dry often. I place the amount of 18 eggs in each tray. We love they way they come out! Freeze driers sure do a great job in preserving food
Hands down best hard boil eggs ever, I had cold eggs from the fridge so I cooked them for 13 mins came out perfect and peeled perfect, thank you Shaye I will be using this recipe from now on :)
Being sub tropical we don't really get a glut or stretch for long without eggs but when there is less of them I do want to learn to waterglass for those times. I keep every egg shell, dry it in the oven after I cook a meal and crumble them for my garden. They are especially appreciated by my tomatoes. 😉💜

I'm just impressed as heck that you walked down steps carrying a tray of sloshy eggs! If that was me, they'd be all over the steps, LOL. We have an overload of eggs at the moment and I plan to crack one egg in each section of a silicone muffin pan, freeze it and then put all those in ziplock bags in the freezer, date marked, of course. If you have the room around your freeze dryer, it might make be easier to bring the bowl down there and fill the trays on the spot. (Unless you were just doing that to show pouring the eggs into trays).

I’d love to get 2 dozen a day! Right now we are 9-12 a day. Sometimes 14. But I have a broody girl who I’m letting sit on some eggs that I know were fertilized by the rooster (from his fave girls). So I’m hoping to have more chickens. My family eats a lot of eggs so never have enough to preserve
So I just got my freeze dryer and I am finding that after fastening on my lids to my mason jars, the fruit is rehydrating. How do you prevent this? Do you add oxygen absorbers to your jars? How long do the raw eggs last in the jars?
Have you tried using a vacuum sealer on the jar lids so they are sealed? You can either use your Freeze Dryer to do this (Retired at 40 has a video on it) or a Food Saver and buy the Jar Attachment. Or use the Jar Attachment with a Brake Bleeder hand vacuum kit (strange but it works - saw a few videos on it. Add an oxygen absorber to keep it longer.
I discovered something about two months ago after frustration with fresh eggs with yolks on the sides or just not where they should be and two day old eggs floating were a big issue and once boiled for years had to become egg salad sandwiches and not the pickled eggs I was trying to do. I have chickens but in winter buy store eggs as I pickle tons all year for quick snacks. I take the store bought out of the fridge for two days and set on the counter they are easier to peel but still they a lot of times have yolks on the side. Well for some reason two months ago I thought hmmm they put the eggs in the cartons big end up. And thought maybe that is an issue the yolk is forced to just go towards the pointy end and sit there. And get stuck on the side. So I tried a thing and turned all the eggs (three dozen) pointy side up. Then that night, turned them back. And then in the morning pointy side up and half way through the day around again. And boiled that night. Every egg yolk boiled was perfectly in the middle of the egg. no floaters as no air trapped. And then recently have done the same with our eggs as their is an abundance. Perfect every time....So I am making sure to store pointy side up and or rotate. But what a relief this has been. It took me 25 years to figure this out Unless it is just a fluke but it has been 100's of eggs now. My Nany 50 years ago told me if the yolk is on the side it was a Rooster if its in the middle it is a hen. I always think of that still. However now I only have hens.....:) We know the odds of that. Loved the x on the hard boiled eggs. Will be doing that from now on. hugs

Lemon curd on a pumpkin cake uses up a whole ton of eggs a well. And it's really good!

We always found that once a chook got the taste of egg shell they became egg peckers and destroyed their eggs as soon as laid.

Pickled hard boiled eggs are another great preserving method, delicious too.

We love freeze drying in our Harvest Right! I definitely recommend filling the trays by the freeze dryer. It makes life even easier.

You should be able to get a very good amount leftover 😊 even if only half of your Chickens laid each day.

When you store them the big end should be up and the pointy end down. There is an air sac at the big end , and it has a purpose.

Try feeding them some fish parts if you them. Especially any egg sacks. They love them and the yolks will be deep orange.

I fill my trays after i take them downstairs. I will spill all over the place if take them downstairs full 😂
My freeze dryer takes about 50+ hours to dry them. We freeze dry often. I place the amount of 18 eggs in each tray. We love they way they come out! Freeze driers sure do a great job in preserving food
Hands down best hard boil eggs ever, I had cold eggs from the fridge so I cooked them for 13 mins came out perfect and peeled perfect, thank you Shaye I will be using this recipe from now on :)

Being sub tropical we don't really get a glut or stretch for long without eggs but when there is less of them I do want to learn to waterglass for those times. I keep every egg shell, dry it in the oven after I cook a meal and crumble them for my garden. They are especially appreciated by my tomatoes. 😉💜

I'm just impressed as heck that you walked down steps carrying a tray of sloshy eggs! If that was me, they'd be all over the steps, LOL. We have an overload of eggs at the moment and I plan to crack one egg in each section of a silicone muffin pan, freeze it and then put all those in ziplock bags in the freezer, date marked, of course. After rehydrating your eggs, how much would you use in your baking to equal one large egg?
If you have the room around your freeze dryer, it might make be easier to bring the bowl down there and fill the trays on the spot. (Unless you were just doing that to show pouring the eggs into trays).
You should look that up again about floating eggs. I always threw out eggs that floated...until I found out that MOST of the time they float, they're still good! Instead, separate all that float. Then use them up ASAP. Crack them each separately in a bowl and do the sniff test as well as a visual test. If they look or smell bad they are bad. If not then they're fine. I eat these all the time and my family. I don't use them for preserving. Only for eating right away.

We grew up on dried Eggs. They were just horrible to the point that my Mum didn't make us eat them because She even had a hard time cooking them 😝.

I’d love to get 2 dozen a day! Right now we are 9-12 a day. Sometimes 14. But I have a broody girl who I’m letting sit on some eggs that I know were fertilized by the rooster (from his fave girls). So I’m hoping to have more chickens. My family eats a lot of eggs so never have enough to preserve

So I just got my freeze dryer and I am finding that after fastening on my lids to my mason jars, the fruit is rehydrating. How do you prevent this? Do you add oxygen absorbers to your jars? How long do the raw eggs last in the jars?
If you’re preserving for long term, Mylar and O2 absorbers are you’re best bet. For short term in glass, you need to vacuum seal or use O2 absorbers.
Have you tried using a vacuum sealer on the jar lids so they are sealed? You can either use your Freeze Dryer to do this (Retired at 40 has a video on it) or a Food Saver and buy the Jar Attachment. Or use the Jar Attachment with a Brake Bleeder hand vacuum kit (strange but it works - saw a few videos on it. Add an oxygen absorber to keep it longer.

When I get enough egg shells I put them through the food processor and put in a container to use on house plants and garden plants like tomatoes

I desperately need a freeze dryer.
I discovered something about two months ago after frustration with fresh eggs with yolks on the sides or just not where they should be and two day old eggs floating were a big issue and once boiled for years had to become egg salad sandwiches and not the pickled eggs I was trying to do. I have chickens but in winter buy store eggs as I pickle tons all year for quick snacks. I take the store bought out of the fridge for two days and set on the counter they are easier to peel but still they a lot of times have yolks on the side. Well for some reason two months ago I thought hmmm they put the eggs in the cartons big end up. And thought maybe that is an issue the yolk is forced to just go towards the pointy end and sit there. And get stuck on the side. So I tried a thing and turned all the eggs (three dozen) pointy side up. Then that night, turned them back. And then in the morning pointy side up and half way through the day around again. And boiled that night. Every egg yolk boiled was perfectly in the middle of the egg. no floaters as no air trapped. And then recently have done the same with our eggs as their is an abundance. Perfect every time....So I am making sure to store pointy side up and or rotate. But what a relief this has been. It took me 25 years to figure this out Unless it is just a fluke but it has been 100's of eggs now. My Nany 50 years ago told me if the yolk is on the side it was a Rooster if its in the middle it is a hen. I always think of that still. However now I only have hens.....:) We know the odds of that. Loved the x on the hard boiled eggs. Will be doing that from now on. hugs
