Kay, you're making a swiss meringue, put in on a double boiler, which means a pot with an inch of water, and place the bowl of egg whites and sugar over that pot and stir continuously until the sugar dissolves, and remove it from the heat, whisk it with an electric mixer or by hand if you'd like a workout, YOU CAN'T DO IT BY A SPOON, DO NOT PUT IT OVER DIRECT HEAT, YOU'LL END UP WITH SWEET SCRAMBELLED EGGS AND MAKE SURE NO FATS LIKE THAT EGG YOLK SPOON COMES IN CONTACT WITH YOU'RE CLEAN EGG WHITES

That's where you're going wrong.. just egg whites, straight out the egg.. in a bowl and mix with your big noisy mixer and then add the sugar as you mix.. the cooking comes at the end when it's in the oven.. not before.. so I hope you try again because you're SO close to perfection x

To make meringue, be sure that you don't get any yolk in the egg whites or they won't beat properly. Beat the whites until they are stiff, adding 2 tablespoons of sugar for each egg, a bit at a time.Bake in a low oven until golden.

Kay, you have to whisk it with a whisk. You should be able to turn the bowl upside down without it running out. Then put it in little piles on a greaseproof sheet on a tray in the oven on a very low heat.

Keep all your utensils clean like the scales and the mixers, please get a new pastry brush. Hygiene is everything in a kitchen. Try using olive oil to cook rather than lard. It’s easier and healthier, it also stops everything sticking to the pans.
Kay, the right consistency, can only be spooned out. If it runs at all, it's not whipped enough. And that blender is not the right appliance to use. My cooking is no where near as entertaining as yours. Keep it up. You're a lovely lady..

To make egg white fluffy you need to get a fork and whisk fast put in sugar a little bit at a time as you whisk till it forms stiff peaks.
