Just returned from India, and I visited Lassiwala in Japiur as well. Everything you said about their lassi is absolutely spot on - it was so good I went back a total of three times. Best streetside drink on a hot day in India. Cheers!
Indian food is not spicy it's about spices and it's about flavour! Ofc sometimes it is spicy and it depends upon place to place how they make! Love the way you enjoy the food ✨ Indian food is not just this... There are so many varieties! The list is endless! Do visit other states as well and enjoy their cuisine! In India like every km the language changes, the food changes, the culture changes! It's a diverse country indeed✨

We have 29 states,29 style of cuisines, and 1.25 crore people, and each mother have 50 ways of masala and recipes to cook a simple lentil soup to a feasting buffet at home.on a daily basis every indian household at least cooks three meals, fresh from scratch, excluding snacks, if we have guests then whole day eating,and bustling in the kitchen.All the food is made by women of the house.Recipe masters of kitchen.
I have tuned in to many of your fantastic street food and take away restaurant videos , and i enjoy them all . I am a little bit surprised that you dont seem to put on much excess weight as the portions of food are fit for a king ... If it were me , i would end up like Mr Creosote from Monty Python's the meaning of life movie ..... Boooommmmmm ! Fair play to you !
The pot of creamy gravy works the magic, really, potato is the best, however cooked ! The Afghani rotis in the tandoori look softer and puffier, and flavorful ginger lassi to enjoy after ! !
Lassi is basically made by mixing curd and milk in ratio 1:3 and adding sugar. Once it's mixed well, top it off with some cream. You can also add chopped mango in the mixing process to make mango lassi
Your one bite has a lot of sabji in your little piece of roti. That's why aloo pyaz tasted so spicy. Try taking a small proportion of sabji with a bite of roti.
One suggestion - When you try biryani or pulao in lunch better not to have breakfast. It's even better not to have dinner the previous night. And always use your fingers completely to hold the rice, i.e. from the base of fingers to the tip of it.
