  • Fugu (河豚 or 鰒; フグ) is the Japanese word for pufferfish and the dish prepared from it, normally species of genus Takifugu, Lagocephalus, or Sphoeroides, or porcupinefish of the genus Diodon. Fugu can be lethally poisonous due to its tetrodotoxin; therefore, it must be carefully prepared to remove toxic parts and to avoid contaminating the meat.
    The restaurant preparation of fugu is strictly controlled by law in Japan and several other countries, and only chefs who have qualified after three or more years of rigorous training are allowed to prepare the fish. Domestic preparation occasionally leads to accidental death.
    Fugu is served as sashimi and chirinabe. Some consider the liver to be the tastiest part, but it is also the most poisonous, and serving this organ in restaurants was banned in Japan in 1984. Fugu has become one of the most celebrated and notorious dishes in Japanese cuisine.

    I'm Japanese, but I have never had puffer fish cuisine. puffer fish is a luxury food. It is a fish that only a chef with such technical skills can prepare, so it is understandable that the price is high.

    The fact that pufferfish poison is 1,200x more poisonous than cyanide and this Chef prepared it in 15 minutes safely and quickly all I can say is this is truly skill right here.

    As a chef currently shadowing my mentor to become certified to prepare torafugu it takes not only ridiculous knife skills, but also muscle memory to safely prepare the stuff. One wrong nick and you could potentially endanger someone's life, but when done properly and safely its one of the finest sashimi fish you can eat.
    Just don't eat too much, it has a tendency to make your face go numb

      Basically, cheap sushi restaurants in Japan are more delicious than any sushi restaurant in the United States, but if you really don't like sushi, please go to a high-class sushi restaurant in Japan.
      The pufferfish is cut thinly because it is hard. It's delicious for those who have eaten all kinds of fish, but it's not suitable for beginners of sashimi.

      @@ASTAROTH_L4M You do need a license. It's pretty hard to get. The track record for restaurants is pretty good, no fatalities in decades, and the last couple of incidents I've heard about are all instances of idiot customers pressuring the restaurant to give them known poisonous parts of the fish (liver, mainly), after which, *surprised pikachu face*, they got poisoned. Other than that, people being poisoned by fugu are almost entirely people preparing it themselves.
      In any case, tetrodotoxin is survivable with prompt treatment. It won't be pleasant - you're basically just hooked up to machines for a couple days to breathe for you while you're completely paralyzed until your body naturally clears the toxin out - but you'll recover, generally without side effects.

      @@sanchez1889 No. It's actually poisonous. The difference between venom and poison is purely method of delivery. However they are chemical pretty much the same, both being made of neurotoxins. Poison enters the body in many ways. It can be breathed in, consumed, or simply diffuse through the skin. Venom on the other hand must enter the blood stream through a direct wound like a snake bite. Therefore, the puffer fish is actually poisonous because it is deadly to eat, rather than venomous.

      @@22espec Hmm... is it possible to pay someone to fish these things? They recently showed up where I'm from and they're bloody aggressive. They're also very hardy and sturdy, and not many like the complicated process required to eat them. We prepare them somewhat similarly to the Japanese, but we leave much more meat, and since most are caught in the wild to reduce their quantity, a wrong cut here certainly can kill.

      @Ashfar Azfar Eh, it is what it is. Most people here just remove the poison glands and boil the fish to remove any leftover poison. Perhaps it is due to differences in our local subspecies.
      I agree with you in that it is not worth it, but for what it is, it is currently the best way we have of dealing with them. They're not exactly exotic food, yeah, but if you know how to cook them, then go ahead, though I'd advise against it beforehand, but once more, we're the only creature who'll eat them, and short of introducing invasive sharks to battle the invasive fish, we can only pray our stomachs don't care too much what we give them.

    I’ve had tiger fugu sashimi. It’s very tasty and something if you’re in Japan to try at least once for sure but price wise it’s only worth the price for the fun first time in Japan experience. You can get 3-4 big meals for the same price and a lot tastier stuff too.
    Not a bad thing though price is because of the huge amount of training to prepare it and somewhat the experience hence it’s just a fun novelty 1 time experience dish in my mind

    He severed the neck from the spine before processing. The nerves were still sending signals to the muscles, which is why the fish was still moving momentarily.
    He killed it humanly.

    The movement while the chef is cutting is due to the nervous system short-circuiting. The first cut at 1:25 severs the tie from the fish's brain to the rest of its body, killing it instantly and in the way considered the most humane way possible.

Killing humanely doesn’t always mean it’s legal. I get what you mean by killing is killing, but humane killing is different, even if it is killing, at least you’re not inflicting them pain, or making them suffer.
