Garlic Lemon Swordfish Filets

1lb swordfish filets
Slices of unsalted butter
1tsp minced garlic
1/2 stick unsalted butter (more if needed)
2tbsp olive oil
1/3 cup white wine
1 cup vegetable broth, chicken or seafood broth (more if needed)
1 lemon
1/2tsp lemon zest
1tsp corn starch
Salt & pepper to taste

How delicious! We are trying swordfish for the first time tomorrow night and this is what I was looking for. Thank you! What kind of white wine did you use? I have tried to make shrimp scampi from my childhood and the white wine I used was not right.
