Engineer here. The thing I’ve come to realize over the years is that often ‘failure’ is part of progress. Doesn’t really make things any more pleasant, but at least you can know when you do get it right the reward is that much more fulfilling. And like many other wise men have said, the best learning experiences come from failing. Keep your head up!

My favorite part of this build is the piece of tape covering up the word "diesel" with electric. It kind of reminds me of the converted M16A1's where you can tell somebody just used a stamp and hammer to change it to say "A2", which I think is fitting for this build.
I hope any piece built to permanently replace it keeps that theme of stamping over the original.

What would you use instead? It's a serial bus designed for automotive use. Differential signal and twisted pair for noise immunity.
Can is, for all the fuzz caused here, super reliable, noise immune two wire system that is used for airbag control and crank angle sensors.

Would it have been easier to build the electronics on the floor before installing into hummer? For ease of troubleshooting? Lots of time spent installing and uninstalling it seems

That pinched wire was fun. Just the other day I found that a USB charging cable I was using went bad because it got touched by my soldering iron. I had it connected to an embedded device I was trying to program and it wouldn't program. When I noticed the slightly melted external insulation I swapped in a new USB cable and it now works! Stuff like that happens. My only concern with the placement of that charger next to the drive shaft is that if the U joint goes out you could end up with a trashed charger and of course it wouldn't be a good to be exposed to the weather. But I'm sure you already thought of that.
