- Here is what you'll need!
Homemade Al Pastor
Serves 10-12
INGREDIENTS
5 pounds boneless pork shoulder
3 tablespoons achiote paste
2 tablespoons guajillo chili powder
1 tablespoon garlic powder
1 tablespoon oregano
1 tablespoon cumin
1 tablespoon salt
1 tablespoon pepper
¾ cup white vinegar
1 cup pineapple juice
1 pineapple, skinned and sliced into 1-inch rounds
1 thick wooden skewer, trimmed to the height of your oven
10-12 small corn tortillas
1 white onion, chopped finely
1 cup cilantro, chopped finely
1 cup salsa of your choice
PREPARATION
Preheat oven to 350°F/180°C.
Slice the pork shoulder into about 1-cm slices, then transfer to a large dish or bowl.
In a bowl, combine the achiote powder, chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and pineapple juice, mashing and stirring until smooth with no lumps.
Pour the marinade over the pork, then toss the pork slices to make sure that they are all coated on all sides. Wrap the dish/bowl in cling film then marinate the pork for at least 2 hours, up to 3-5 days in the refrigerator.
On a baking sheet lined with parchment paper or foil, place down a slice or two of the pineapple. Take a wooden skewer and push it directly in the middle of the pineapple.
Remove the pork from the fridge and push the slices through the skewer, layering one after the other until there is a 1-inch gap at the top. Push another pineapple slice on top.
Bake for about an hour and a half, until slightly charred on the outside and deep red.
Rest the meat for about 10 minutes, then carve off thin slices of the pork.
Slice off thin pieces of the roasted pineapples as well.
To assemble and serve, place some pork on the tortillas, followed by a few pieces of pineapple, a sprinkle of onions, a pinch of cilantro, then a small spoonful of the salsa.
Enjoy!

Those are perfect and authentic... I was born and raised in Mexico and i own a Mexican restuarant in California that's how it's done except for the baking part. So don't hate.
think twice now breh, we dont pineapple up the tacos though...
think twice Not all of us have a trompo maker in hand my friend😉 Saludos desde Tabasco!
Noland Ryan we do though, the tacos de pastor has pineapple many people just don't serve it that way.
In The Bay Area, they don't, especially not it a burrito... not that I wouldn't try it =^)
Noland Ryan I live in the Bay Area also and if you pay a taquero for parties a lot of them cook it with pineapple but just don't serve it on the taco.
I am a Mexican, and I approve of this recipe. riquísimo!
LOL, el típico "Hola qué hace". Saludos :)

can i ask you hat the hell is achiote paste and chili owder? I'm in Argentina and I can´t find any of these here? alternatives, plz! i want to try this recipe.
Saludos.
I’ve tried this recipe, IS THE BEST THING EVER‼️‼️‼️‼️ 100% recommended
I’ve tried a lot of pastor recipes from a lot of other channels and I can easily say this was my favorite of them all
I'm not Mexican, but I really love you right now for sharing your incredible recipe. Now I can be the big shot that can cook incredible tacos 😍😁
People saying "ew" to pineapple in pork but that's basically a Hawaiian pizza. Plus pastor tacos are amamzingggg
DANI G I say Ew because I don't like pork lol

Yes, but no one likes Hawaiian pizza.

Looks simple not to complicated and I love al pastor tacos. Gonna be trying this at home. Thanks for the video
This is gold, actually platinum CZcams tutorial, best 1 yet.
I had this yesterday. It was sooo good!
I love the sweetness from the pineapple. Thank you for sharing. 😊
I just made this tonight and I want to scream from the mountain tops how delicious it was. Life is good!
Also, I added some homemade guadajillo and tomatillo sauces. Thanks Tasty! 11/10.
Hope your still cooking
omg is all I can say when I'm all out of words... these tasty videos are my favorite thing on CZcams... straight to the point... and they make it look effortless 😊
TACOS ARE LIFE 🇲🇽
Don't forget to soak your bamboo skewers for a few hours and they won't burn as easily on the grill or roticery👍
Another fave of mine - al pastor. These vids are so awesome. Short, simple and sweet.
This totally elevated my al pastor game. Thanks for the pro tip guys!
Pineapple is a must even if it’s just a bit in the marinade ( you can use juice are blend a piece of pineapple into it ).... it gives it the distinctive Al Pastor flavor and tenderizes the meat. Make sure the meat you use is not thick and has some fat on it to keep it moist and not dry ( trust me on this ). If you don’t have achiote paste it’s no biggie ... it’s more for color .... instead Use dried ancho peppers ... take out seeds and put in HOT water to rehydrate and blend in ... make sure paste is still thick when you spread it on .
Como mexicano que soy, apruebo 100% este video 😍
Totally legit!!! I used this marinade recipe, but let the meat marinate for 24 hrs in the fridge. I skewered the meat on a spit with top and bottom of a pineapple and grilled uncovered over medium-high heat on my 22" Weber kettle charcoal grill using the Onlyfire rotisserie attachment. 1.5 hrs cook time. The crispy meat was so tempting, we broke off bits as it was rotating! Served on corn tortillas with grilled pineapple chunks, diced onions, cilantro, salsa verde, and a squeeze of lime!
Short and sweet. That’s the kind of videos that I like
the only authentic Mexican dish Tasty has put out so far
And they don't even call it what it is: Carne Adovada
@@matthewj23 they called Al pastor
Just replace that salsa with red salsa and guacamole 🔥
the achiote paste is that just for the Color???
I currently have my own version of this in the oven, and I just had to run and fix it because it promptly fell over. I had to brace it with several additional skewers and a tin foil wrap on the bottom. As soon as the pineapple starts to cook, it releases the moisture and changes shape. It smells amazing though. Can't wait to try it. :)
So leave it in until the pineapple is ready?
This is why I love this channel you have answered my al pastor craving .
These tacos were awesome and easy to do they were really tasty
I use to go to the taco stand in Tijuana, mexico and order 12 of these tacos. the best.
They're served on small tortillas.
Now you have diabetes?
@@joaquinmoncayo3526 that's not how diabetes works.
Nice! Love them bacon-wrapped street dogs with grilled jalapeno and onions on top too.
@@cheesesteak22 How do you know? Do you provide the dog
Don't really like pineapple on these tacos, and in Mexico we cook the pork on actual charcoal fire instead of the oven, but this is legit as fuck and really close to the mexican recipe. Props to these guys!
(The pineapple part is just prefrence, in some states in Mexico it's more common than in others)
hiimacrazyguy I lived in DF and there was always pineapple. I love it because of the pineapple. But I agree this is pretty close, I usually have to make it on the stove I'll try this next time!
Not always in charcoal fire. Have you ever seen this LP-Gas cookers? cdn.animalgourmet.com/wp-content/uploads/2015/12/111215-tacos-al-pastor-m%C3%A9xico-3.jpg
Jennifer Trepasso the pineapple juice not only gives it flavor, but acts as a. tenderizer.
Aristarco Palacios yes, I would love one of those in my kitchen.
Al Pastor is my favorite and this video made my day. If you're looking for good Tacos in Montreal, Taco Trunp is the place to go!!!
I made this yesterday and it came out pretty good.. I did not have guajillo powder so I used California chili powder .. I also used Achiote Powder because paste is sticky and in the video it looked like it was a powder and not a paste... and I did 2 towers and a mini tower 10 minutes into baking and my towers fell sadly .. I basically put a bunch of skewers throughout all 3 towers so they wouldn't fall and they would lean against each other.. and make sure your pineapple slices at the bottom are thick only because while baking the meat released juice and made the pineapple soggy.. that was my experience oh and it took me 2 hours because I had 3 towers not 1
If you haven't had this yet, put it on your bucket list! Al pastor tacos are so good!
I need this in my life.
Love, love, love it!! Thanks for the recipe!!
I want to say thank you for the recipe. We made it with the exact ingredients just a little extra cause with had extra meat. We used pork cut like a steak and it was very delicious. Thank you TASTY!
Wow! I can't believe finally Tasty made an accurate video. This is Mexican, Mexican approved!
Yes but you’re Mexican American. That doesn’t count
Hahaha I'm a Mexican, born, raised and currently living in Monterrey, Nuevo León Mexico. It DOES count.

Made this today and its so good! I was skeptical at first but glad I decided to make it. ❤
thank you for this and all of your recipes
This is gonna be my new years eve dinner!
chris green how’d it turn out?
I made this and I can tell you it's wonderful...HEAVENLY. As a Mexican I can confirm it's real authentic and delicious (an understatement). I followed the ingredients and directions as in the video but changed a few things.
1. I put in less vinegar than mentioned in the video. A lot less. In the video it says to put 3/4th of a cup of vinegar. Vinegar is strong and that much will make your meat tasting mostly like vinegar....unless if you have 2 or 3x more meat than mentioned in the video. I used 1/3 of a cup or maybe half of 1/3 (1/6), and still just rubbed a little bit on the meat
2. I used a pork loin for the meat instead of the shoulder roast. Still good. Still does justice and you don't need to worry about the bone with pork loin.
3. I didn't have achiote so I just looked up online some substitute. Basically just add a bit more cumin and vinegar I think.
I had high expectations for this and even still exceeded my expectations. Heaven and deliciousness in every bite.
What kind of vinegar do you use?
peskypole8 just regular or sometimes apple cidar vinegar.
Antonio Maldonado loo
Worried... I used the 3/4 vinigar... my marinade smells like a spicy pickle now... hope I didn't ruin it. I wish I saw your comment before I made it. Wish me luck
Yeah I was going to do that and a friend did this before me. He followed the instructions and told me that it tasted like vinegar. My mom then said that you don't add that much vinegar. That it's a lot, unless you want it to taste like a spicy pickle, as you said ;) Haha
Yes!!! This right here is the best part about living in Cali 😋
Se ve delicioso, gracias por compartir su receta.
That is as long as a recipe video should be! Perfect length. A lot of the videos coming out now the host talks for way longer than this entire video took. Short, sweet and to the point!
Use canned juice. If you marinate fresh too long your pork goes to mush.
You could also use sour orange juice, that's how a lot of people do this recipe as well.
FINALLY-an al pastor recipe that brings me back to the old Tres Amigos Taqueria in San Mateo. Thank you!!
Nice video, simple and to the point. Thank you
I'm mexican and approve this message.
Word of advice: use gloves. Achiote will leave your nails orange/yellowish for days
Thanks for the heads up!
U-R👍Right....
Yes its true
Is chili powder achiote? I ask cause I’ve seen achiote on the Mexican isle
@@aframs-cctaf-rams-cct6424 it's not. Achiote is also called annatto. It's not spicy at all and is mostly just used to give food the orange/red color.
Wow..that's one of top 10 for me of Tasty's recipes...👏🏼
Fantastic! Thank you for sharing, I have prepared Moo Shu Pork Tacos and shared the recipe with others but will definitely try your Tacos as well.
I stayed in Mexico City a few years ago in the Colonia Roma district, and the tacos al pastor from the little restaurant next to the hotel were the most delicious, amazing things I ever had. Three of them were about $1.50! Insanely good. And no -- no ill side effects whatsoever.

the most perfect tacos ever made, minus the baking part since we are use to to cook them with charcoal, but aside that, this is the best recipe ever (I was born in Mexico and I love this tacos a lot, I even hungry now that I see this vid :v)
Making this right now, constantly worried that it is going to fall over though. So i braced it on 4 sides with additional balancing sticks.
John : make that bottom pineapple piece LARGER than the top pineapple piece. 🤠🖖
look delicious!! will do that cook after xmas.. Thank for sharing..
Very cool that Binging with Babish gave you guys a shout-out! Two of my favorite CZcams cooking channels coming together!
So I made this and it was delicious, but I had a huge problem with the tower tipping over in the oven. If you look closely, the slice of pineapple at the bottom at 0:39 is a different size than at 0:42. Still, I used a pretty big piece and had to add more skewers to help stabilize it.

With diced onion, cilantro and a squeeze of lime. Nothing else and get at least 3, or 5. 5 should do it. Try it in a burrito too.

what can i use as a substitute for achiote paste?
erik aronsson Nothig. It's The base of The recipe
erik aronsson It is advisable to use the achiote, but if you do not have it, you can use ancho chili and guajillo chili, but if you have achiote and you also have the 2 chilies much better
I can only see that meat tower falling over in my oven
nunya bidness ikr I can already see the fire department coming and then me scrubbing the oven for days

Tasty, what's the recipe for the Green Sauce please?
anyhoo, it would be great to make these tonight...it's family movie night...HILLARY'S AMERICA.😃
You need tomatillo, which a small, green tomato that has the dried flower covering it. Depending on how many people you are making the salsa for, will be the amount of tomatillos you need. Let's say 5 of the medium sized ones, 1 or 2 chile serranos(Or more if you like it hotter), a chunk of onion and a clove of garlic. Take the dried flower off the tomatillos, wash them and put them in a pot with boiling water(enough to cover tomatillos) with salt and the onion, chiles and garlic(peeled). Boil untilthe tomatillos burst. Turn it off. Let cool a bit, pour into your blender and give it a whir. Taste it and check if it needs more salt. If it is too acidic add just the tip of a teaspoon of sugar. Give it another quick whirr. Taste check. Done.
I'm a Mexican mom and I make this all the time.
Some people grill the tomatillos, chiles and onion, but the tomatillos can turn bitter.
I am from Mexico and this is a perfect taco, the pineapple is perfect, the pork is perfect the sauce looks tasty. Only I could change the tortilla for corn tortilla. The key to the success of this type of taco is pineapple. :D
Muy fácil, se ve delicioso
yes Mexican food is the bomb so much flavor in it my mouth gets so watery you don't have to add pineapple on your taco
What is the greeny source for the last?
It's called "salsa verde".
Celantro
Green tomatillos, diced into a pan with oil, couple cloves of garlic, onions, sautee until skin on tomatillos is soft or peeling off, throw into blender, blend consistency, add water if needed. Add salt to your liking.
A huevo!!!😀 I mean...
*Oh yes*
