  • Happy Monday... is that a thing? Well, it is the start of my Birthday week so I guess let's make it a thing. I am going to start this week off with a fun little Puerto Rican recipe that is perfect for all your upcoming BBQs. We are making some Yuca en Escabeche! This is a fun little recipe that is a cool sub for Potato Salad that you will totally fall in love with.     2/3 Cup Olive Oil
    1 Onion, Sliced
    3 Garlic Cloves
    4 Tbsp. White Vinegar
    3 Tbsp. Stuffed Green Olives
    2 Tbsp. Pimientos

    My coworker grows yuca here in N. FL. She gave me some from her garden. I made this dish, and it is delicioso! Perfecto! Hard to get good yuca up here (fresh or prepared). Your recipe is terrific! I did not change a thing.

    Hello. I love yuca but does it have strings in them

      The centers can be fibrous, it is easy to strip that out when you halve them before boiling because center portion is exposed. The longer you cook it the easier it is to remove.
