      I run out of tablea and I found online cacao nibs (from peru) and I used the coffee grinder of nutri bullet. The result is close enough to the tablea I used to bring home from pinas during vacations. I wish I can find also online some cocoa nibs from pinas and the grinder. Watching from FL.

      Hello just purchased one melanger. Do you have recipes for milk chocolate using this equipment ? Can I add milk using the melanger? Will adding the milk not destroy the melanger? Thanks for your reply.

      @@ms.maniba4628 use po milk powder. Slowly add other ingredients like sugar and milk powder as it grinds it down. Di naman masisira ang melanger.

      @cacaocultureph Piura Blanco chocolate mousse from scratch.
      Roast beans at 275° for 10 minutes then at 217° F for 40 minutes. Shell, winnow, chop in vitamixer then put into melanger with melted cacoa butter and process with sugar at ratio of 60, 10, 30 percent respectively for 24 hours (20 micron grain size). Mousse is melted chocolate, egg yolks, sugar, beaten egg whites folded in, then fold in whipped cream.
      Why make chocolate from scratch?
      Look up Piura Blanco. It's around $15.00 for 100 grams. I used 200 grams in this batch. The 1 kg of cacoa beans cost $15 and I ended up with 1400 grams of finished chocolate. But it's more than that. The quality of the chocolate is better. There are three types of cacoa beans (Criollo, Forastero and Trinitario, and multiple hybrids) the Criollo is the rarest type and that is what this is. It tastes more like a milk chocolate. Then there is the process. By doing it yourself you know that the beans are sorted and the rocks and sticks have been removed. The roasting winnowing process is under your control. And you can conch the beans to a finer level than what most of the big chocolate makers do. I go to 20um. The standard in the US is 30um and it is noticeable. The biggest thing you accomplish though is helping others and improving the world. These beans are grown in areas that were formerly producing drugs. By purchasing beans through companies like Meridian Cacoa the farmers get paid a decent amount. Big chocolate companies only pay $2 a kg for cocoa beans based on a world wide pricing cartel.

    HI useful information and nice editing, however I would suggest you do something for the audio quality, the music is mixed too loud and the original audio track of you speaking is very unclear (probably bad microphone), it is very challenging to actually make out what you are saying which is a pity since I believe you have good info to share.

      Hi maam Gina, we do not have a preference in terms of supplier or brand. Corn mill grinders are very common and you can check your agri machine/supply shops in your area. You can also check peanut / wet grinder type that is already stainless so it will be more hygienic 😊

      Hi Manolet, thanks for watching and supporting the channel! We found ours online pero imported from China through alibaba. We bought it 5 years ago so we forgot which link or store we got it from.

    Can you grind the nibs to powder using a typical high-powered blender?

      It will not be as fine. Also cacao is not similar to coffee that can just be easily ground into powder. Higher fat content in cacao which makes it similar to peanut creating a paste

    Hello, I loved the video. It’s best I’ve seen with all the details. I had questions about the process. 1. In India we’ve wet grinder. Can I use that? 2. If we stop the grinding for night then how to start in morning again. Won’t the chocolate freeze?

      Hi Tvisha, thanks for watching the video and supporting the channel. Chocolate melangers especially the more compact ones are based on India’s spice / wet grinders. I am not sure how different they would be now after they modified it to work with chocolate. I would imagine it would be more heavy duty to sustain longer grinding hours.
      For your 2nd question, grinding process is okay to work in a normal room temperature, if left overnight it will not freeze or harden. You can just resume grinding in the morning.

    Weve been into cacao making for so long and I am planning to innovate like putting some additional flavor on it but of course maintain as well the old school tablea which mold by hands the circle one.. My question is do we have here in the Phil Manual or electric which Can create spiral in shape?

    The melanguer is literally on for 24 hours? Or are there moments when you shut off like in the middle of the night?

      We typically shut off late at night, then turn them back on in the morning. While I think the melanguers can endure long hours, I am pro-safety and would like to prevent any instances or chances of machine breakdown or fire especially during times when people are not present in the area (like at night).

    How many years a melanger machine will last if it runs 24 to 72 hours or let say 24/7?

As for your question I am not quite sure how many years would the life span of the machine would be because there are a lot of variables. These types of melangers are not necessarily designed for full production in a factory type setting because there are larger types available.
      Machines do break down eventually but you just need to take care and listen to the tips we gave in the video.

      Cacao beans, or cacao nibs still has oil in it called cocoa butter. Once grinder it will turn to liquid/ fluid form.
      If your cacao beans low cocoa butter content it may come out a bit less fluid grounds of nibs

      Hi Eileen😊 thank you for watching our videos and supporting the channel. Depends po sa recipe na ginagawa nyo and depends din po visually sa nakikita nyo if need po ng cocoa butter.
      Dark chocolate recipe for example 75% means that there will be 25% na other ingredients kadalasan po ay sugar. The current cocoa butter na kasama sa cocoa liquor is usually enough already na no need na dagdagan. If mas higher na ang % of other ingredients then mapapansin nyo na need na mag dagdag kasi nagiging grainy or di na smooth ang mixture.

      That’s a different Machine. You need to use an oil extractor to extract the cocoa butter. The left over becomes the cocoa powder

      Hi Ursala, thanks for asking. There is no standard. Each tablea maker use different molds depending on their preference. Given that the weight and number of tablea in 1kg will be different.
      For ours we use a mold that produces 12-13g tablea disc. 1kg is approx 84 discs
      We don’t endorse any brand at the moment but using a melanger to start is ok. But once you get more quantity size of the grinder will matter.

      Goal of Grinding is the achieve a certain level of smoothness. For tablea pwede po less hours sa melanger. Use you finger or taste it to feel the roughness or smoothness. If ok na po sa inyo then stop nyo na po.

      Yes the ability of cacao to liquify is from the cocoa butter or the natural oil that is has. Similar to grinding peanut butter.
      Sugar is just an ingredient that you can add.

      We have not really figured that out. Para sa ibang machines iba iba ang electrical requirements so best to check the equipment and maybe ask an electrician for more accurate information 😊

      Not sure about the price now but this type of melanger ranges from 24k-27k i think

Sana po makaabot dun hahaha medyo madugo po talaga yung FDA regulations and requirements that the best advice we can give is go to the FDA in your local area kasi sila ang nagiinspect. While may guide and certain parameters on the requirements minsan subjective pag dating sa inspectors. DTI po sometimes may training on FDA baka lang po makatulong in the mean time wala pa kami nagawang video.
