- Opening a new restaurant is easily one of the hardest things to figure out for chef/owners. I opened The Grey Plume over eight years ago in the middle of a recession when banks were simply not loaning out money- especially for restaurants! I approached 18 banks with a super solid performa and very detailed plans...but ultimately heard NO 18 times. In this video, I share how I found funding to open my first restaurant.
