Italian Buttercream 3 Ways

- Honey Cinnamon Buttercream (yield: enough to fill and frost an 8-inch cake)
1.25 c (420g) honey
1/4 c (57g) water
6 egg whites
2 tsp cinnamon
16 oz (454g) unsalted butter, softened
1/4 tsp fine salt
1 tsp vanilla extract
1. Add the honey and water to a pot and stir briefly until combined. Set over medium heat and cook until the honey reaches between 220 - 230F (104 - 110C). At this time, begin whipping the egg whites on medium-low.
2. Continue cooking the honey until it reaches a final temperature between 248 - 250F (120 - 121C). Remove from the heat and whisk in the cinnamon.
3. Slowly stream the hot honey/cinnamon into the whipping egg whites, being careful not to pour the mixture onto the whisk attachment.
4. Continue mixing until the bowl is cool to the touch and the meringue is between 80 - 85F (27 - 29C).
5. With the mixer running, add cubes of butter one at a time. Continue slowly adding the butter until it is all incorporated. (the mixture may look curdled at first but keep mixing and it will come together).
6. Finish by adding the salt and vanilla.
I never even considered that it was possible to use honey for buttercream
Step your imagination up. Unless the particular sweetener is reacting chemically in a way that is vital to the dish, sweeteners can always be swapped 😅

@@MangInutil Many recipes and anyone making this in large quantities replace part of the sugar with corn syrup to prevent it from crystalizing and going all grainy

Made maple meringue buttercream a couple years ago. It was amazing. The only thing stopping me from making it more often is the fact maple syrup is too expensive.

It has been crazyyyy, in Germany it‘s like 5-7€ as far as I‘m concerned
And it's only going to go up in price from here. Shifting climate is leading to lower yield and it's expected to get worse.
Yes in my country maple syrup is very expensive. It’s become more of a luxury purchase at this point.

Italian is the easiest to make a strong buttercream

Try burning your honey before dissolving in a simple syrup, now use it up to temp and you'll get a almost savoury sweet buttercream to use in combination with a whole range of flavours like nuts, red pepper coconut or spices. Great for people who arent into overly sweet things

When I make salted caramel macarons I made an Italian buttercream, and after I stream in the hot sugar, I also stream in hot salted caramel. I use less of the sugar mixture, because I’m adding caramel. It turns out sooooo good 😍🤤

My personal favorite is a Russian buttercream because it has a perfect balance of sweet that mixes with the butter perfectly, Russian buttercream is whipped butter, and condensed milk, 1 12oz can in case anyone wants to try it☺️!

One of my family traditions is to make the Cakes for my kids birthdays. I'm not an artist or that good of a baker, but they always love the cakes that are made. I've always hated using/relying on store bought frosting. My oldest kiddos birthday is tomorrow, but we're celebrating on Saturday. She wants a "Pizza Shaped Cake".
