- I'm gonna show you how to make a Philly Cheesesteak at home today. Making a real cheesesteak at home is something I've always viewed as out of reach until I was asked to make one recently. So I studied some of the legends, Pat's, Dalessandro's, Gino's and worked on a method to make a real Philly cheesesteak at home for all to enjoy, where ever you are!

@@icetheking4310 yeah I agree Pat's and Geno's are not the best cheesesteaks in philly... the one steak shop on south street (I can't remember the name right now) is the best in my opinion.
His looks really good, but what it's missing is the bread. That's what EVERYONE is missing. It's the rolls that some company in Philly drops off in these huge plastic bags in front of delis all over Philly. The rolls are double-length and you have to cut them in half length-wise to make a sandwich, so every sandwich has a round end and a flat end. The rolls have corn meal on the bottom. THESE are THE rolls and they make all the difference in the world, I think.
Otherwise his steak and cheese sandwich looks close to a cheese steak, but it's still lacking. Someone needs to figure out those rolls first.
I've been eating cheesesteaks from all the Philadelphia spots for years. Thank you for not making another lazy attempt at a Philly Cheese Steak. This is pretty spot on, sir!

Holy Cow, I just made this Cheesesteak on the Weber Kettle using the SNS- OUTSTANDING! I used a bone-in Cowboy Steak(1.15 lbs, removed bone) and used Ghee as the Beef Tallow was $15.00 for a kind of a smaller jar. It was a lot of liquid! I didn’t trim any fat, It was almost like frying the beef and onions, but by the end, the liquid reduced and part of the beef was really crunchy, and the provolone, oh yeah! but the onions didn’t burn like it would with regular butter-they were perfect. I added some garlic powder and freshly cracked black pepper. My son and I were eating these cheesesteaks and watching the 2nd day of the NFL Draft, it was heavenly, haha 😁 My teenage Son said, Dad, the heck with wings, this is the sh*t!. In the question of which fat to choose as beef tallow might be difficult to get I would propose goose fat! It's absolutely clear and you can heat it up well and gives a great meaty taste (e.g. it's great for fried potatoes with onions and bacon).
So where to get goose fat from? We usually have goose for Christmas and a roast goose gives you plenty of golden fat which I keep in the fridge in glasses.

Actual cheesesteaks use salt pepper and garlic powder near the end of the cook so you don't draw out the juices with salt. The roll is key tho. You need like a cross Italain/French roll to really get it right.

You did a pretty great job with this. As some who made thousands of these professionally (or as professional as you can call someone who slangs cheesesteaks), this is the most authentic to my experience that i've seen on youtube.
People might nitpick the provolone choice, but i think that's fine. One can quibble over Whiz vs American vs Provolone. As long as we all agree that Swiss is an abomination on a cheesesteak, we can all get along

This was a well produced segment in my opinion. I like how it started with quickly showing the whole process of making a Philly cheesesteak, then it went back to break it down. Great teaching method, IMO.
Thank your it’s not for everyone, but I believe learning happens through repetition. Many tell me they don’t need the rest of the video after the montage. Good in them, but I believe going in depth even for things like side items helps people feel more confident in the kitchen. Thank you John

I feel like it's pretty well known that Genos/Pats are tourist spots - Never lived there, but in discussions about hitting Philly I've noticed that people often answer they avoided those two on their tourist visit!

Turns out you can cook every manner of takeout and standbys. I had to before because I moved to Wyoming. The Rockies are worth it. Most of the time.
Just made this and omg its soooooo good. Only thing I did different was add pepper after I scooped it. And since I have a smaller cast iron pan I used one hamburger onion, half a ribeye, and used hoggie buns. Worked perfect since only feeding two.
Finding the right bun is the hardest part. Great video

As a kid, visiting family members in North Philly I remember going to a place called "Aunt Mary's where a quality meat was freshly sliced , the cheese was a quality white cheese such as provolone ( maybe even mozzerela) as you used in the video (NEVER cheez wiz!!!) along with carmelized onion mixed with the meat. I also remember a red sauce perhaps a pizza or marinara sauce which was also applied. Also a long fresh Italian roll is key. (As used in making Hoagies!)
When you brought the cheese steaks home & unwrapped them, the aroma was amazing. Great memories & a great video!

The key to the real cheesesteak is the fact that a place like Pat’s or Geno’s is open 24hrs 365. They never clean the grill. All the flavor from the grill has built up for generations. Really.

Jim's is so inconsistent nowadays and has become an "if you know" tourist trap like how most ppl ask where to go that isn't Pat's or Geno's. We send em to Jim's. I definitely prefer ishkabibbles over them, but also on South Street is Woodrow's which would prob taste similar to this steak as they use beef tallow and quality ingredients just a lil more expensive.

I'm from Georgia and never had a Philly Cheese steak sandwich worth a hot damn until I went to Philadelphia on a business trip and was asked what I wanted for lunch one day.
I told my host engineer that I had a pretty good idea that Philly Cheese Steaks could be hella good if done right, but I must not have had one done right because all the ones I'd had back home were all bland AF.
He grinned, and told me he was going to change all that, and took me to a hole-in-the-wall place that was literally about 20 feet wide, and 50 feet long.
Long story short - My mind was blown, and I have refused to eat a PCS outside of Philly ever since because I don't want to soil that experience.
I'm gonna try a variation of this recipe / cook style this weekend, because from my lips to the ears of Sweet Baby Jesus, when these things are done right, they are pretty damn close to the world's most perfect food.
Your videos are awesome. I'm sure you put a lot of effort and research into your recipes but you make them look so simple and approachable for the average joe! Some of the best food content out there.
With that said, can you try to make some chopped cheese?
I just found this channel and as a Philly girl.. this is the best version of a cheesesteak I've seen on CZcams. Provolone is perfectly valid, even if it's not the most popular cheese choice. I like provolone when I get long hots on my cheesesteak

Nice job - chop on the meat was too thin and let the meat crust up a bit on high heat. Extra points for scooping the steak onto the roll. (Philly boy, born and raised).
Wrong, you don't let the meat crisp up. Too overcooked and loses it's juices.
Also talo is s liquidized fat.. The fat on the steak itself can be chewy and unpleasant. I always trim mine. A little bit goes a long way.

Didn't have beef fat, thought I'd use butter but didnt have that either, got the wrong steak, cut it way too thick, didn't mince it well enough, put way too much salt on everything... but it still tasted amazing! Now I know why people enjoy cooking so much 😁 thank you for this vid

That said, provolone is for sure and acceptable choice. I just rather have it on my roast beef and roast pork.
