Crawfish Cream Sauce
Ingredients:
1 pound of Louisiana Crawfish Tails
1 bunch of diced green onions
1 teaspoon of Worcestershire sauce
1 teaspoon of Louisiana hot sauce
2 tablespoons of Chilau Boil Bomb
1 cup of heavy whipping cream
1 Tablespoon of butter or bacon grease
8 oz of pepper jack cheese
Cajun or Creole seasoning to taste
3/4 teaspoon of Xanthan Gum
Directions:
Prep the green onions by dicing them. In a bowl mix in the crawfish tails, Worcestershire sauce, Louisiana hot sauce, Chilau Boil Bomb, cajun or creole seasonings. Now use an immersion blender of regular blender to add Xanthan Gum into the cream. With the butter or the bacon grease hot and melted add in the green onions to saute for a few minutes. Add in the seasoned crawfish tails and heat through for a few minutes. Now add in the cream with Xanthan Gum into the mix and stir well until thicken to your preference. If your making Crawfish Bread you will want it think. Taste for seasoning and adjust to your taste. Enjoy!
Rus's Cajun Seasoning
Ingredients:
2.5 tablespoons paprika (I made it with red bell pepper)
2 tablespoons garlic powder
2 tablespoons salt
1.5 tablespoons white pepper powder
1 tablespoon cayenne pepper powder
1.5 teaspoons oregano powder
1 tablespoon onion powder
1 tablespoon dried thyme (crushed)
1.5 teaspoon dried parsley (crushed)
1/2 teaspoon lemon zest powder
Mix all ingredients well and store in airtight container.

Oh WOW! that looked good! I love crawfish cream sauce. I have never had it in bread like that. I have eaten on pasta as you suggested, but my favorite is to have it served over grilled or blackened catfish or redfish. Also good served over almost any type of fried fish.

Yes sir! Make sure the pre packaged crawfish you get is from Louisiana! They boil Cajun style and then freeze package them. Do it one better by lookin for that “Certified Cajun” label with the Louisiana symbol. Can’t go wrong! Props to you for the Bieber Farms crawfish👌🏽👌🏽👌🏽

Xanthan gum is great in so many things as a thickener, emulsifier, or to use to suspend ingredients in bottles sauces or dressings. No wonder it shows up in so many labels on the back of bottles. That looked delicious, my friend. I used xanthan gum to thicken our hot sauce. It can be tricky. Great tip on how to mix it into a liquid. I also am interested in that outdoor oven. I want to come check that out. Great video, my friend!

Hey Brian, I was thinking that when he mentioned it, that it was in the Bayou hot sauce. Xanthan Gum is in several hot sauce brands including Texas Pete, Tapatío, and Crystal Extra Hot.

Hey Russ if you haven't tried Arrow Root as a thickener give it a try. It will make your cream sauce glissen, they use it in some chinese sauces to make it shine. Have fun.

I met with James and Ana of Aim em and Claim em Smokers in The Woodlands Texas and we had lunch at a Mexican Restaurant that uses my seasonings to cook their Beef and Chicken Fajitas and they were very impressed with the flavor of the Fajitas. I wish you were closer so I could meet up with you and take you to lunch/dinner. Kim and I have not been able to travel due to finances and health issues, I was supposed to stop by when we were going to visit my grand children in Georgia but we have never made that trip, but we will for sure sometime this summer and I definitely want to stop by and treat you and your wife to dinner some place. You helped us a while back and I have not forgotten about it. I still have not been able to change/update my website with your videos, I still have not finished paying that guy who built our website and then billed us, it was very expensive and over a year later we are still making payments and he will not allow us to make any changes until he is completely paid. Hopefully that will take place soon.

You can order the Xanthan gum on Amazon if you can't find it in your local supermarket, and the Chilau has to be purchased from their website, but is so worth it! Very delicious stuff!

Xanthan gum is tasteless. It adds no flavor because it doesn't have any. If you look at the back of some labels you will see that you have already been consuming it in many store bought products. It has amazing qualities hence why it is used in so many things.

Not sure where you can get crawfish in Germany but you could use shrimp if you can get that.

Looks like you really have some nice beaches on the gulf coast, but I guess you don't get much waves except in a storm , do you?
We have barrier islands just offshore that prevents big waves here in the sound but other states such as Alabama and Florida don’t have the islands and they get nice waves. I use to surf Florida Gulf Coast a lot back in the day. We also would take boats to our islands and go to the south side to catch decent waves as well
That's interesting to hear. As a passionate windsurfer in my younger years i travelled a lot to find the best surfspots in Europe and sure it's fascinating to get an idea of what US coastlines look like. There must be beautiful places outside of California or Florida as well.
