- For a berry fool with intense fruitiness and rich body, we used gelatin to thicken our fruit and combined whipped cream with sour cream for just the right touch of richness with a tangy undertone.

To all the haters who say “just eat the berries with some cream” you appear to be missing the entire point of preparing food. There is so much more to the enjoyment of food beyond the simple consumption of the individual ingredients. Beautiful presentation alone can increase the enjoyment of a dish, add to that the enjoyment from having food prepared in new or interesting ways, and the new flavors and textures that arise when we mix different ingredients together.
No one is suggesting that this is the _only_ or the _proper_ way to enjoy berries and whipped cream! Rather, this is showing a way to transform an already delicious set of ingredients into a truly memorable dish.
They can all go make their own channel
I so agree
The movie "Ratatouille" captured this perfectly.
Who else is definitely eating the mint garnish? #teammintgarnish 🌿
Much love to my Grammie for introducing me to the test kitchen magazines (back in the day) she kept them all, what I wouldn’t do to have her collection, sadly prob got “junked” she would have loved CZcams! Thanx for another great recipe & a warm memory 🫶
I enjoy Julia's segments.
These were yummy and pretty! I halved the recipe but found that I still needed to use the 2 tesp of gelatin powder instead of 1 tesp. The puree/gelatin mix sat in the fridge overnight with no problem. I used only strawberries and skipped the sieving. I couldn't find Carr's whole wheat crackers so I used Lotus Biscoff instead. I'm sure Walker's shortbread would work as well. Thanks for the recipe!
If you use the plastic blade that came with your food processor (you know, the one you never use) it will smoosh up the berries without grinding the seeds. That makes it much easier to strain them out and there won't be any fine particles slipping through the seive.
The Cuisinart I just bought didn't even come with the plastic blade.
You can save the seeds and pulp and use them in muffins or other baked goods.
That just screams Summer Time...YUM.!!!
Take it to the next level and make it a ‘Eton Mess’ by breaking up meringues into the layers! We also sometimes add chopped marshmallow or make it with yoghurt instead of cream and top with grated chocolate! Yum
Goodness this looks refreshing on a hot day. Have everything except cookery crackery. Will definitely make this. Are those tulips behind her? If so love tulips. Thank you Julia.
Made these last night. So good. Not too sweet so you can taste all of the berry flavor and not just sugar like so many other fool recipes.
Looks so good! Love anything strawberry!
Shortbread cookies sound like a good topping.
Great Idea ❤
The bowl count on making this dessert is astonishing.
I watched your program, Julia.. everything looked delicious! I especially liked the turkey meatballs not to mention the fruit dessert! Very good.. very good!
Thanks Julia it's so nice to see you someone who knows to scrape out the bowl or the container with a rubber scraper. With the home ec classes being canceled for the last fifteen years or so it's just so frustrating to watch people use a liquid measuring cup for dry ingredients and a metal measuring cup for wet ingredients. Very frustrating. But I assume Fairport schools taught you well even before you got to culinary school. I was trying to see if it was Wegmans heavy cream 😊.
Very nice recipe and such a lovely person ❤ Explanation on point. Thank you for sharing this
"You really can make a fool with any fruit you want."
ME: "I can make a fool without any fruit. All I have to do is open my mouth."
What a beautiful desert.
Mmmmmmmmmm… what more is there to say? Since you asked, I’m making box brownies with ice cream, scratch cheeses blintzes and lemon shortbread cookies. You should come on by!
Normally I love recipes on ATK, but there is no way I’m doing all this work when fresh berries in vanilla ice cream or on shortcake with whipped cream tastes so great!
Yep. If the berries go in the blender or food processor or on the stove... it's frozen and prepped for me.
Maybe that's why these fool things were more popular in George Washington's time
@@louschwick7301 you might be on to something there 🤔
Can’t wait to try this one. Thanks for sharing
Looks delicious. Can you substitute Truvia for the sugar? My son would love this but he’s type 2 so I’m looking to reduce as much of the added sugar as possible. Thanks. Love all your videos!
I use stevia and monkfruit mix and usually use about half the amount suggested. I make "jam" that way with gelatin. It is a form of freezer jam.
Good to have them taken-care-of.😊
I’m going to try this… I might even use my berries (blackberries and raspberries) I grow….😋😋
Looks fabulous!
That looks so delicious 😋 a lot of steps but worth it 😊
Whenever I strain something like this I use a ladle to evenly push the food through the mesh by using a gentle stirring motion.
Me too !!😂
Anyone else curious the tool the plastic wrap was in that made the cut so quick/flawless! Inquiring minds must know!
Strain the fruit directly into your saucepan to reduce cleanup and fruit loss.
True, but the point of straining it into a measuring cup is because the recipe calls for 2-1/2 cups. If you strain it directly into the saucepan and you end up with more or less than 2-1/2 cups, it could ruin the recipe.
Use a rubber spatula to get all 2 1/2 cups into the saucepan
How about using WEIGHT measurement? You know, that thing that ALL world uses but Americans can’t.
@@LuigiNotaronot everyone will have s kitchen scale.
You could totally reduce the juice you strained out, and mix it back in. And you could also probably use graham crackers instead if you don't have or want to use the crackers they recommend.
Since they're a test kitchen, they may have tried that and found it wasn't as successful as just using the puree. (Although I'd probably try reducing the juice and then adding a small corn starch slurry to ensure it's not too runny.) But I'm 100% with you on the graham crackers. I think Maria's cookies would also make a good substitute that's even cheaper than graham crackers. I've tried Carr's whole wheat crackers and they're ok but pricey. I wonder how Wheat Thins would be as a substitute since they're also wheat crackers that have a bit of sweetness to them?
Julia, I go with the big spoonful too. And I eat the sprig of Mint as well. YUM! ❤
Oh, my goodness, I will be right over, Julia! 💘
Looks very yummy 👌😋
lovely segment, recipe will be amazing! Anyone else think it was hilarious to see her eat it with a giant spoon?!?
Items for the sous chef to wash: 1/4 size baking sheet, paring knife, food processor bowl, food processor blade, food processor lid, two fine mesh strainers, 4-cup liquid measuring cup, three rubber spatulas, 1/2 cup measuring cup, small bowl, mini bowl, whisk, small saucepan, four medium bowls, chef knife, cutting board, tablespoon, standing mixer bowl, standing mixer whisk, 1/4 cup measuring cup, 1/2 teaspoon, 1/3 cup measuring cup, 2 spoons, 6 parfait glasses, 6 serving spoons.
Beautiful ❤
Looking forward to the day I can afford that much fruit.
Yeah, that's $12 just for the fresh berries (based on pricing at my local Walmart in Florida). But if you're having company, it might be worth the splurge.
That’s only about $8 worth of berries in WI at Aldi.
A nice cool dessert. Thx
Frozen berries for purée to save money since sugar is added anyway? Lemon zest garnish with mint leaves?
Wonder why you didn't put the cream mixture at the bottom of the dish, then berries, and then the rest of the whole mixture and cream topping ?
Would thawed, frozen berries work for the purée?
Yes
I could easily eat all the 6 parfait glasses in 10 minutes!!!
Same here 😂 it’s good to always eat good food. It’s been really nice following this channel and their videos are amazing, much love from me ♥️🌹
I’d love to know you better, thats only if you dont mind cos you seem to be a very nice person with a great sense of humor
What is the gadget you have for storing and cutting cling wrap?? I never have much luck with the box it comes in
yum!
What other fruit can you use for this recipe. I was thinking mango, papaya or coconut.
any
This is definitely something I am going to make, however I am wondering about what plastic dispenser you are using, I would like to purchase it
I don't see a plastic dispenser in this video. I think only the food processor bowl is plastic; everything else appears to be glass.
@@kareninalabamai think the commenter above meant the plastic wrap cutter thingy..
So pretty!!! Yummy!
😋 Oh My! 🤤
You don't have to do this, nobody's going to eat the mint.... this Marine thinking hmm 🤔 mint whipped cream sounds good!
What can you use insted of raspberries? I have an allergy to them.
Yummy, now I have yogi d my “Claudia” glasses
Now I have to find my glasses(Claudia)
I'd be a fool to turn down that luscious dessert.
I see what you did there. 😎
GOODDDDD
Can we get an equipment review for that fancy plastic wrap cutting device!? 😮
Wow that looks de’lish
I would like to know haw to make this using the Silk cream substitute as I’m dairy free. I tried to whip it with some pudding mix and thickener but it didn’t hold
I’m vegan, and I plan to try making using whipped aquafaba instead of whipped cream, and agar instead of gelatin.
@@sandrah7512 I agree that whipped aquafaba is more like egg white meringue, than whipped cream, but with sugar and vanilla I think the aquafaba goes well with berries. I’ve never personally tried to whip coconut cream, but that should work well, although some people strongly dislike the taste of coconut.
I love the videos but that ad for Stern's and foster aggravating
Don't throw away the seeds with the remaining strawberries! Eat it!
Sure thing. Have fun straining that Raspberry puree irl.
Hello everyone ✌🖐
🥳🥳🎉🎂
6 oz and a pound. Most people don’t know that. Measure in cups please.
You ask for peoples cc just to see the recipe?? yikes!
This probably tastes good but it sure looks like a lot of work for something that is nothing more than a glorified berries with whipped cream.
True! But preparing it this way does give you some different textures that are pleasing.
This looks delicious but way too many steps for a summer dessert for me…but I hope you enjoy it…
Who ever thought that it was a cute name.....IT'S NOT! "Fools" is such a tacky name for a dessert! (instead of heating up cream with egg, they whipped cream with gelatin) So why don't they just call it a "Gelatin Berry Parfait" ¯\_(ツ)_/¯
The term fool or foole is over 400 years old so I think it's sticking around. It was once synonymous with trifle, another silly name for a yummy dessert.
Why are you so racist against mint?
I always eat the mint garnish
This is A LOT of work for what it is. Just eat some berries with whipped cream.
