Hey Chip. Just watched the Natedogs video and thanks! I made my first batch of mustard a while ago that I got out of a cookbook that only had champagne vinegar and mustard seeds in it I did not really like it .Kept it in the fridge for a while debating weather to toss it or not and then I watched this clip and decided to add salt, brown sugar and some of my citra IPA that I have on tap. Turned out great!!! Learned something new again from your videos!

My wife and I are coming to Minneapolis/St. Paul this December. One last trip before we have a baby. We have a bunch of restaurants and breweries on our itinerary. Adding Nate Dogs now. Might have to be a few week long trip.

But if it was a fly - it tastes damn good with all that syrup and bacon. #ExtraProtein

Hey Nate, don't know if you'll scour the comments, but I have a question about the mustard I'd love your input.
I would love to make my own 'stard but so many craft mustards are so vinegary to me. I am sensitive to vinegar and so many 'stards and other vinegar-heavy stuff ends up tasting like bad strawberries. For example, Stone's Spent Grain Mustard is absolutely foul with red wine vinegar and strawberries to me. I would love to make my own mustard, but you pointed out how vinegar locks in heat and that makes a ton of sense now. Is there a substitute, or do you have a low end of vinegar to add you'd recommend? Thanks, would love do lay my own stard on a dog soon!
Nathan Speer Good question...I'd try using plain white vinegar and use half as much. But be sure to make up for the missing liquid with more beer. Hope that works!!
