  • Rocky Mountain oysters are deep-fried bull testicles. Denver's 125-year-old restaurant The Buckhorn Exchange is the most famous purveyor of this regional treat. The Buckhorn Exchange is part restaurant, part Wild West museum, with hundreds of taxidermy animals and Western memorabilia covering the walls. Insider’s Joe Avella stopped by to learn about this Denver institution.

I was on holiday in Spain a few years ago and I saw another diner at a restaurant tucking into the most delicious looking dish
I asked the waiter what it was and he replied “Those are bull testicles, we honour the courage of the bull from the bull fight by cooking them perfectly”
Me “I’ll have them - they look delicious”
Waiter “Senor - we only have one serving a night so come back tomorrow”
So I came back the next day and the waiter served me the smallest looking meatballs I’d ever seen so I asked “why does it look nothing like the dish I saw last night?”
He replied “Senor, some days the matador wins the bull fight but today he did not”

As someone from CO i love people's reactions when they find that out. I especially love the reaction from kids who grew up eating fast food "Gross i'd never eat that" When in reality it's more healthy and nutritious than any food they've ever eaten in the city. Poor kids have only ever eaten fast food and factor farmed meats from wal-mart i feel bad lol i grew up on natural farm raised food.

I actually prefer bull nuts to oysters because fresh seafood doesn't exist here it's all frozen and delivered from elsewhere.
