He was cold to this man because he helped the Nazis torture Jesse. He built the contraptions that kept him locked up. Earlier in the film he didn't recognize him and didn't want to kill him or his buddy even though he should have. Jesse never lost his empathy, even in this shoot out.

For those that didn’t understand: Jesse has two guns: the one he plays the wild west and one in his pocket that no one knows of. When that guy reaches to the gun Jesse shoots with the gun from the pocket, that was already in his hand.
What I love about this series is how often we see that Jesse has a very gentle heart. Jesse literally wouldn't kill a bug. We see this in the OS and in this movie moments before he goes in there and does the deed. He's not a violent man. But he does what he needs to when backed into a corner.

Exactly what I am saying, that was an insanely fast quick draw. You can tell he didn’t expect to lose, not knowing Jesse was gonna play dirty.
Niel was hopped up on coke and had been drinking prior to this. A quick draw means nothing if he cant hit the target.

Sure Mr. White scolded him, degraded him and among other things but Mr. White could have left him a while back and found another partner that would not have caused him as many problems as Jesse did.
