How to make Authentic Ghanaian Eggplant Abomu Recipe I Discover Ghanaian most flavourful dish

    Abomu, is a Akan language for a "dip". In this video, I'll share the recipe for my eggplant dip which is packed with several levels of complex flavours derived from the simplest and freshest of ingredients. Eggplant abomu/dip pairs well with boiled African yams, green or ripened, boiled sweet or regular potatoes, boiled squash, etc. I prefer to leave the seeds and skin in the eggplants because they're a great source of nutrition and fiber.
    Ingredients:
    1/2 pound eggplant
    3 roma tomatoes (reserve one for garnish)
    1 medium red onion (substitute with any onion of choice)
    3 red serrano chilis
    1 tablespoon of roasted peanuts
    1 pinky finger size fermented fish (momoni) may substitute with 1/2 teaspoon of shrimp paste
    3 eggs (optional)
    4 tablespoons of palm oil (substitute with same amount virgin coconut oil)
    1/4 of a medium salted tilapia (koobi) optional
    For garnish (3 sprigs of scallions, 1/3 bell pepper, 1 roma tomatoes, 1/2 medium red onion)

    I clicked just to see how you cook receipe in Turkey we have over hundred receipes, I have never seen anyone Cook aubergine to remove bitterness, male aubergine are sweeter female ones are little bitter but I love that you added fermented fish.       @@NanaabasKitchen I do have a prepositions: did you consider a food chain restaurant (something like chipotle). I always wonder why we can "Italian restaurant" "Mexican restaurants"... But these aint patronise by the natives for name's sake? I think Ghana should out and appealing to to others... We can talk more about this. Greetings from the Empire state!

      King mackerel. The market women in Ghana have a name for it and I think it is “Shoin” in Ga.
