  • Today, we'll take a look at the WorkSharp Tools Professional Precision Adjust Sharpener, which is an improvement on the Original Precision Adjust, but finds itself quite close to very strong competition. We'll unbox, assemble, use, and then I'll give a quick review at the end. Timestamps below:
    00:00 - Unboxing
    06:00 - Assembly
    07:20 - Nick tries to figure out what the clamp support does, but misses the section of the manual which explains what it does
    07:55 - Continued assembly by an absolute idiot
    12:50 - Sharpening
    48:20 - Small Knife Table Sharpening
    51:50 - Final Conclusions

    You didn't need to re-seat the knife @NickShabazz. The release lever at the top/backside allows the whole tower portion to tilt back and you could have easily swung the knife underneath without changing anything. It's designed to handle fixed blades that are quite long, including kitchen knives.

    Nick, I get that this is the way you're doing reviews at the moment. And the long comment list of "read the instructions" are not unreasonable. Sure, as you said multiple times, you're better off getting the technical details from someone who isn't a random jackass, but I still feel this video is not in keeping with your general reviewing standards. Although I generally agree with your final conclusions on this piece, I don't think you're giving the more complete reviews (in terms of information) we all love from you.

    If you haven't already found it, @CuttingBoardReviews had a video titled "Did Work Sharp stop $3 short of Professional level? Is it really PRECISION Adjust-able until the fix" that provides some excellent tips on modifications to fine-tune the tool. From the description "Eliminating slop, rocking, and rolling in this machine is as easy as removing 6 screws, swapping bushings, and placing 2 zip-ties on the plastic components"

    Nick I’m so glad your wife likes the knife! The household package opener is indeed the most noble of knife duties. Great to see it get a nice new edge!
    That system is very luxe, nice to see it in action. I’ll admit to being a Lansky guy myself and probably wouldn’t take the $300 leap (gotta save that cash for all the watches you tell us to buy). 180, 320, 600 then hand hone and strop as needed seems like it basically does the same job. But you certainly can’t go wrong with a Worksharp, definitely the most recommendable brand

  • @omfgbbqsauce1177
    @omfgbbqsauce1177 Před 2 měsíci +9

    I feel like if a company goes through the trouble of writing a manual, a reviewer owes it that company to at least read the entire manual beforehand.
    Not saying in this case specifically, but just in general, some questions or best practices may be answered or explained, which might provide a better quality or more complete review.
    About the system, I feel like you either create some art and machine it entirely out of metal, or aim for a very capable home system like the original precision adjust.
    This one does about the same job as the original version, using the same or similar abrasive selection, yet still limits you to the worksharp specific abrasives format, all the while still being a consumer grade plastic construction in places. And a lot more expensive to boot.
    I love worksharp, having made my start on their precision adjust, and still enjoy the guided field sharpener and the excellent Ken Onion edition with blade grinding attachment, but I feel this is a miss in a couple of key ways.

  • @herbcraven7146
    @herbcraven7146 Před 2 měsíci

    That rotation issue is common to all the Worksharp sharpeners. On my basic model, there is a mark on one side of the clamp that indicates when the show side should be visible.

  • @Mo.89.
    @Mo.89. Před 2 měsíci +13

    Have to add to the chorus of “read the instructions” - or don’t review it. Anyone who has come to your video to decide on this sharpener is getting bad info because you didn’t take the time to learn how it works and that’s pretty unfair to Work Sharp. You didn’t need to reclamp the blade at all.

  • @BManningtree
    @BManningtree Před 2 měsíci

    Getting great results with mine. I have to clamp some additional material in with thin, big blades like some kitchen knife or there is to much flex. It should have an additional big blade clamp.

  • @sixteenstone007
    @sixteenstone007 Před 2 měsíci

    I thought there was a brace on this more expensive version that slides up under the clamp to prevent flex while applying pressure? Or is it still in the box lol

      belt system will leave scratches in your blade as you pull through unless you tape it up real good. also the belt system puts a different edge, it's a rounded bevel instead of a rigid angled bevel. seems like the belt system is better for bigger and heavier blades/tools. this one is more delicate for smaller items.

    For those really polished edges, get a couple spare hones, and buy the diamond lappiing films, they go down to 0.3micron in grit and are very affordable. And they can let you get that mirror polished edge

  • @fredoswego
    @fredoswego Před 2 měsíci +1

    That does seem like a "flaw" in all these systems. Even if you knew the exact angle of your edge, the angle changes based on how much blade is inside the clamp. It's almost like you;d need to scratch a line in on the blade so you always knew the position. Or somebody could come up with an adjustable stop so you always have the same amount of blade in the clamp, i.e. knife X has stop at setting 2, and just push the spine of the blade to the stop.

    • @robertlefeaux
      @robertlefeaux Před 2 měsíci +3

      Or you just do what everyone who uses guided systems uses, an angle finder.

  • @theredbar-cross8515
    @theredbar-cross8515 Před 2 měsíci +3

    The reason why the bevel angle seems to shift as you move up and down the length of the blade is not the fault of the blade, but of the inherent design of the sharpening device.
    The farther out from the center of the device, the flatter the angle is going to be. It's just basic trigonometry. This effect isn't a huge deal with shorter knives, but with longer knives, it will make a huge difference in the angle between tip and center of the blade.

    • @TheGuidedSharpeningGuide
      @TheGuidedSharpeningGuide Před 2 měsíci +2

      Not true at all you need to watch a guys video that explains the science on guided sharpening systems and the change of angles the farther you go from center. His channel is called Simple Little Life. He scientifically explains why the angle doesn't change.

    • @MrMonsterjesus
      @MrMonsterjesus Před 2 měsíci +4

      @@TheGuidedSharpeningGuide you are both half right. The angle doesn't change the farther you go from the center, but that is only theoretically true for completely straight knives...something like a straight cleaver. But for most knives this is not the case, since they have a curved edge, which will lead to a change in the angle.
      Also no real need for "science" here. it's really just basic trigonometry.
