Listen y'all, here's my take as to why Max is very much like a local:
Max is actually a fair-skinned brown-haired Bangkalan boy who has been travelling abroad for too long thus currently only speaks bits and pieces of Indonesian and Madurese, and he misses his hometown cuisine so much he gets a well known Indonesian traditional culinary expert to accompany him just so he can pretend to be a foreigner sampling local foods.
A proof of that is observable at 18:07 when Max is reminded to wash his hand before touching the rice by the aunties and Arie.
Aunties and Arie: "Cuci tangan, bos." (Wash your hand, boss.)
Max: "Yeah, I will. I haven't touched the rice yet, don't worry. Tssk." Shakes his head. "You think I don't know..." Then proceeds to flex his rice compressing skills for all to see.
Nom nom nom... MANTAP!

Oh, nice! Ajêm Adun+Nase Kêppêl is difficult to find outside of Madura. Yes, East Java leans more towards salty+spicy as opposed to Central Java’s sweet. Soto Madura is typical to that area, light enough to be had with other dishes. Other sotos in Indonesia can be very different, like Soto Betawi with its (dairy) milk+coconut milk and hearty Soto Medan. Glad that you learned a bit of the local lingo like ꦱꦏꦭꦺꦴꦁꦏꦺꦴꦁ (sakalangkong) and ꦢꦺꦥꦢꦺ (dêpadê) 👍

That's remind me when visiting Sumenep, Madura. I rent a boat to Gili Labak island and stayed at the captain's house after that. The whole family are so warm, they give me rujak Madura. Ah, and near that house there'is a warung, I buy nasi campur Madura with huge prawn, squid, sambal, so good! Nice experience anyway..

Bedanya hanya saat penyajian, Nasi Ambeng berasa dari Jawa Tengah biasanya di sajikan untuk acara syukuran, di makan rame rame, 1 nampan di makan 4-5 orang.. untuk toping hampir sama ada ayam, telur rebus/asin/pindang, serundeng, urap sayur, empal daging, tempe/tahu bacem... Pilihan toping di sesuaikan selera masing2.. kalau bedanya mungkin dari segi rasa, ambengan cwnderung manis karna umumnya masakan jawa tengah/jogjakarta manis, kalau nasi Madura lebih pedas sesuai khas Jawa Timur
