Hello Joel, always a pleasure these recipes, your sauce is syrupy. The beef cheek is perfect in the carbonade! (with french fries ah ah) I like with mash potatoes, "mousseline" with the sauce. Happy to find Pompon... oops Whiskey, by the way, I drink one ! take care

I don’t believe I’ve never had beef cheeks….I’ve had every other thing that the majority would go “yuck” to…cow tongue, tripe, pork stomach stuffed with pork meat, pork belly, sausage, and rice, it’s stuffed and sewn and cooked in broth….to die for! Blood sausage….. so good. Cod cheeks and tongues (very small) super delicious…..chicken feet stewed! Heavenly! Octopus! Limpets…my favourite seafood of all seafoods! I was born in Portugal (Acores) we eat crazy things!!!! But I’ve never had beef cheeks….need to remedy this. My husband will not have any, not unless I tell him it’s beef stew…..he’ll know it’s not, lol.
Beef cheeks have become popular, what once was a cheap cut now is becoming a prime cut. Enjoy the stew! LOL
