Recipe:
Ingredients----------------------------------------------------------------------------------------------------
1 1/2 cup Almond flour
1/2 cup Sugar
1 tbsp vanilla essence
4 tbsp milk (use if batter is too thick )
2 tbsp sliced Almond (optional)
2 tbsp sliced Pistachio (optional)
4 Eggs
Pinch of Salt
Instructions--------------------------------------------------------------------------------------------------
1. Preheat your oven at 350°F or 180°C.
2. Separate the egg yolk and whites, Combine egg yolk and sugar and beat until creamy and fluffy.
3. Add in vanilla essence and Almond flour combine until well incorporated..
Add in milk if the batter is too thick.
4. In another clean bowl whip the egg whites until soft peaks are formed.
5. Fold in the egg white into batter and mix well. Do not over mix.
6. Transfer the batter to greased pan and bake at 350°F or 180°C for 40 to 45 minutes until toothpick comes out clean.
7. Allow the cake to cool down for around 15 minutes.

Thanx 4 this recipe. I baked it tonight and it came out perfect. Used Monk Fruit instead of sugar. Also added a generous dash of Allspice, Cinnamon and Anise (grounds). Delicious.

I would suggest to blanch the almonds before blending for better color.

Yes, you can bake them cupcake tins. Baking time may vary though. Typical cupcakes baking time is around 15 to 20 minutes, these may take similar baking time.

Hi Jaishri Saxena, Following tips may be helpful for you -
1. Ensure eggs are at room temperature and not cold as they whip the best at room temperature.
2. Ensure the bowl doesn't have any other greasy residue.
3. Ensure the egg yolk is not mixed with egg white.
4. Ensure while whipping egg white is not heating too much. You can whip at medium speed until soft peak starts forming.

If you try making this cake again, try adding in a tbsp of icing sugar ( superfine powdered sugar) or maybe a tbsp of corn flour to achieve the consistency of soft peaks easily). Works well for hot/humid weather.

That is correct, we don't need baking soda or baking powder for this recipe. We are whipping egg whites to soft peak to trap the air we need to create air pockets inside the cake.

Yes, almond flour is almond powder. It is very fine powder.

No, the eggs are separated and the whites are whipped to increase volume. Air is the leavener here.

Hi today I tried your cake. It didn't come as sponge for me. It was completely cooked. All the ingredients are same. I didn't change anything. I dont know what mistake I have done. But the taste was awesone
Hi Archana Rajesh, I would suggest to check two things -
- whipped egg whites soft peak consistency which helps trap enough air to make spongy cake and
- mixing the whipped egg white with batter using cut & fold method. Cut and fold method helps retain the whipped eggs air inside batter.
We are not using any chemical agent to form air pockets during baking but the air trapped by whipped egg whites. It is essential to retain that air inside batter which forms tiny air pockets during baking and thus spongy structure for the cake.
