Chocolate ganache recipe:
300 grams dark chocolate
150 grams heavy / whipping cream
microwave for 30 seconds and stir until melted. You may find that you need to return the mixture to the microwave for an additional 10 seconds, then stir until all is combined and melted.
CHOCOLATE CHIP COOKIE RECIPE:
340 grams butter
90 grams vegetable shortening (I used crissco, but you can also use Copha)
140 grams brown sugar
200 gams caster sugar
1 teaspoons vanilla extract, optional
2 eggs
420 grams plain flour
1 teaspoon bicarbonate soda
pinch of salt
2 cups chocolate chips (I used milk chocolate by Cadbury and dark chocolate chips by Nestle)
Bake the larger cookies at 180 degrees Celsius (3350 Fahrenheit) for 10 to 12 minutes and the smaller cookies at the same temperature, but for only about 8 to 10 minutes. You want the edges to brown but just the edges. Take them out of the oven and allow them to cool COMPLETELY. They might look and feel soft, but if you allow them to cool completely they will be easy to take off the baking paper and will be solid and hard after cooled, making them beautifully soft and chewy cookies :)

Gosh that looks fabulous. I have a question, what type of shortening did you use ? I'm in Australia just as you are, and I've always wondered what to use if you can't get crisco easily online
You can cut the cookies with a cookie cutter after baking for a more perfect shape. This is nice as is tho
