I actually taught a basic Mexican foods class at my church as a fund raiser to a bunch of gringa senoras and they were very surprised to see a big, tall Mexican man teaching a cooking class. LOL I taught them this recipe for tortillas, then Spanish rice, salsa, guacamole and finally, traditional chili rellenos and a casserole version. A complete meal, fit for a Spanish Don of old California. All the money went to my churches ministry that feeds the poor. Here is a shocker, this meal was not only vegetarian but vegan also, making it perfect for lent.
Minoo, I suggest you divide dough into equal size pieces of dough and simply roll each piece in your hands to quickly form a ball and flatten slightly. No need to tuck dough. Place all flatten pieces of dough in a bowl covered with a plate. When ready to roll out dough, remove one piece of dough from the bowl at a time keeping the remaining pieces of dough covered in the bowl so the dough stays clean and moist and doesn’t dry out. Put a little all purpose flour onto a small plate or pudding dish and use this flour to dip each dough ball. Then roll out thin (no stretching needed) on a rolling board or rolling surface. Flip rolled dough onto a flat griddle preheated to medium heat. Cook on both sides.
I make flour tortillas often. It’s fine to use a little salt. The water can be warm, it doesn’t need to be boiled. Mix about 1/4 tsp. of salt with 2 cups of all purpose flour. Add sufficient warm water until dough comes together. Knead for a few minutes. Put dough in a bowl and cover the bowl with a plate. Let the dough rest for 20-30 minutes. Divide dough into equal size portions and with your hands roll each portion into a ball and then press to flatten a little. Keep dough balls covered in the bowl and work with one piece of the dough at a time. Place a little all purpose flour into a pyrex pudding dish - dip your dough ball into this flour to lightly dust it. Roll the dough ball until it is thin. Pick up the dough and with a backward hand motion, flip the dough forward onto a preheated flat griddle. Cook first side, flip dough with tong or spatula and cook second side. Dough will puff up . Place cooked flour tortillas onto a plate lined with a paper towel. If you wish, with a spoon, you can spread a little butter on each or leave plain. Keep covered until ready to serve. These are delicious, moist and healthier than store bought tortillas. Enjoy.
Awesome video. I LOVE how you showed your messy counter and how hard it was to knead the dough. I also appreciated you showing ripping the plastic wrap and I loved your detailed instruction. It made it more REAL and how things really go for someone in the kitchen. I also appreciate NO OIL!!! Being a WFPB eater, oil is HUGE - I don't use ANY so this was awesome. Just a really great video. I appreciate it and I WILL be TRYING to make this. Everything I make turns into a flop :(

Gotta use baking powder at least. Tip: find a real recipe. Tip: if you want an easy two step recipe, use self rising flour, (not plain) and water, if you're trying to keep it healthy with no oils or fats. But a teaspoon of "healthier" oil, such as olive or avocado, definitely makes softer, more pliable tortillas.
Where did you get the recipe for tortillas? We never use boiling water and over use of flour. You had enough on board. We have made tortillas for so long we stick with our recipe. Thanks
Oh no! Haha I’m sorry to hear that. You could try it with an almond flour or a gluten free 1:1 ratio flour if you don’t want to use all purpose, but I haven’t tried it for myself so I can’t confirm that it’ll be great!
No, you need baking powder. Don't use boiling water. No one ever uses yeast for tortillas. You can't knead it, because you didn't use baking powder and this is too much flour. Where is the salt? Wow, this recipe will not work. 😅 please.....
If you click on the recipe link, the written recipe calls for salt..but also says optional..and maybe you can try it before saying that it NEEDS baking powder..I have never used baking powder in my tortillas..in biscuits, but not tortillas..but I'd still be willing to try it.
