Because I don't thing retailers buying at very far OTM. Then who is buying. Many times I noticed, if 17900CE premium is 100 rupees, but in market depth there is no buyers and sellers near to 100 rupees. Minimum 10 rupees difference is there. Then who is really buying? How and who is creating liquidity?

volume is not number of transactions it should be number of shares traded. the transaction can be 1 but volume can be 1000, if shares 1000 traded
1 transaction = 1 buying + 1 selling = number of shares traded. I have defined it in the beginning of the video. What you are referring to is "number of orders". 1 order could have many transactions.
I guess no one has explained open interest with an example that you gave sir. Explained very well sir
