    Another way to bake these is to use a 9x13 baking dish. That way you can cut them into squares and put them on toast to have a nice breakfast sandwich. Been making these for over 10 years, I never get tired of them, there are so many different ingredients you can add, change them up so they never get boring.

    These look good. People need to remember this is Breakfast for One, not a family and quit asking and expecting recipe modifications to suit them. If you need that look it up. This is for single folks. There is hardly anything out there for us. I'm very grateful. ❤❤ I have a hard time sometimes trying to cook for just one.

    Thanks for this simple recipe. My sister has brain damage and cooking has to be simple and safe for her to manage. This is perfect for her to make, she'll omit the bacon, and put chopped spinach or baby tomatoes. I worry about her eating habits and will send these recipes to her. Thanks again.       You can make plenty of combinations. fry bacon, red onions, tomatoes separately.
      Chop up capsicums, and spring onion, grate carrot, zucchini, and grated cheese.
      Put each item in separate containers and experiment.
      I add thickened cream and a little cheese to the egg mixture.
      Put a little shredded cheese on each one with about two minutes to go.
      Chopped yellow capsicum with the egg mixture poured over it plus cheese on top has been my fave so far. Cooked in air-fryer.

    Literally the best recipe! It’s the Parmesan cheese and cream ( I used half and half) that makes this recipe delicious! I added turkey bacon and cheddar cheese didn’t have green onions but still was soooooo delicious. Go to recipe and delicious left overs! Put it in the air fryer for a few mins 😋😋😋😋

    Hello, again. Just wanted to let you know that I made this recipe. The only difference I made to it is that I added some frozen peas and corn and poured the whole mixture into a baking dishes. This was lovely and fluffy and super-delicious. I think the Parmesan Cheese gives it that something 'extra'. Thanks, again. This recipe will go into my "Hall of Fame" recipe collection.

    We make these all the time! We add finely chopped onion, a small amount of bacon, some seasonings like parsley and basil, some orgengo and garlic! So easy to make.

    After trying these, it is the only egg breakfast, lunch or dinner that I make. I don't have to worry that they aren't done enough if someone else makes them. They are the perfect meal on the go. I make these for the week and put them in the fridge and grab one on the way to the door.

    I didn’t have green onions so used finely chopped Vidalia onions, plus added chopped orange pepper. Also, as I was at the camp and didn’t fave a muffin tin, I used a small cake pan and it worked fine. I really liked the recipe and will make it again.

    I added a knob of honey goat cheese ($2 at Lidl) and that was my favorite part. It sinks into the middle for a nice filling. I went to 23 min for a little more color on top, but it was a little too dry. I’ll experiment around 13-15 to see if I can keep it more moist while still being able to turn them out whole. Great keto recipe without trying to be one.

    This looks delicious. I’ve made similar to this with different additions including spinach and ham. Additionally, you can make this in a square baking dish or double the recipe to use in a 9x13 pan. It what I make for Thanksgiving and Christmas mornings. It’s delicious steaming hot or room temperature.

    I first made muffin pan liners using baking paper as per CZcams as I have always had trouble with these sticking. You can put any mix of ingredients of course. I put left over scalloped potatoes in the base, then added chopped ham and baby spinach, green onions and grated cheese.Truly a versatile recipe. Thanks for your help.

    I do these without any cream at all as it’s fattening and use chopped up tomatoes and spinach (in some) and also bake them in a silicone muffin pan. Much easier to get out the muffins. They last about a week in the fridge and you can also freeze them. Great for breakfast on the go.

      You do need some good fats in a healthy diet. However, if you prefer a low fat version, then by all means, adjust accordingly, but cheese too is fattening. Do you use a light version?

      I have found that Kraft makes a fat free shredded cheddar. I’ll try making with these the way you describe with that.

      Cream is not fattening. The fat that you eat is not the fat that you store. Fat making you fat is old dogma--Making foods less fatty has kick-started the obesity pandemic.

    Muffin omelets are awesome. You can change them up with any ingredients. I like using mushrooms, green/red peppers and breakfast sausage. You just have to brown the sausage first and drain the excess grease. Top off with some shredded parmasen cheese.

    For my first time today, I used the measurements suggested in this recipe (using parmesan instead of gruyere) and I also used a 24 well USA muffin pan and the Air Fryer setting in the Breville Smart Oven Air Fryer Pro and in 7 quick minutes, these were done! I let them rest for a few minutes. They tasted amazing. I can't wait to try different ingredients and also do these in a 12 well for a more filling option. We just set up our new espresso machine and now with these egg bites, "Bye Bye, coffee shop stops!" (These taste better anyway!)

    I do some form of a mini quiche for breakfast every morning. I change up what I put in them and usually make 4 or 5 days worth at a time. Easy healthy out the door breakfast for us.

    Yes 5 of them are the perfectly proportioned snack size for any teenager after soccer practice, a fully grown man may need 6 or 7. And we dont need soccer practice. :)

    No hate or anything but this ALMOST got me in trouble. So I was with my dad, and I decided to make this. When I got to the bacon part, and i put it in the microwave, the bacon burned and the glass tray was cracked. I put 4 MINUTES exact and there was smoke. Thank god my dad didn’t tell my mom or I would be dead.
    But the muffin egg is really good 👍

      Ground sausage, onions and bell peppers, spinach, cheese and sweet potatoes.
      Follow the above recipe.
      Note: I put a couple pieces of spinach in the bottom of the muffin cup; sweet potatoes are spiral cut to fit in muffin cup. Just pour the egg mixture over spinach and sweet potatoes

    🌸 I would slice mushrooms in “stacks” with spinach pieces and maybe a s-m-a-l-l piece of tomato. Cheese? A kind that agrees with me - just a little bit... yummm. LOVE THIS VIDEO 🌸🙏🌸ThankYou🙏🌸🙏

      Tomatoes are full of juice makes them runny [too wet] This recipe always turns out good.

      @@joycelee8944 Actually, I used a grape tomato and sliced it in quarters and placed it inside and it worked well. I also added my own fillers and added some herbs and it was delicious!

    Omg omg omg i just made these and these are SO DELICIOUS! I didn’t have heavy cream so i used just a little bit amount of milk and used some other chopped veggies that had been sitting in my fridge. I used just 4 eggs as well so i just did approx amount of each ingredients. Mmm i’m going for another one! Thanks for the video!

    I made these with feta cheese and smoked salmon for a book club brunch. Everyone was sooo impressed - I decided not to mention that they only took 30 minutes to make.
