Elote is what Mexican Street Corn is known as. We're talking a creamy, cheesy sauce slathered on some grilled corn and then topped with some chili powder and maybe more cheese. While I was eating my version the other day, I thought it would make a terrific soup. And so, Elote Chowder was born as easily and deliciously as it is to make!

VERY important tip!!!! @ 1:43 - (From 20 years in the restaurant biz) Always taste your jalapeno while cutting it. They vary greatly in heat but there is NO way to tell visually. We love spice dishes, but sometimes it requires 6 peppers and sometimes it only requires 2. You can control or ruin a dish if you do not taste test the peppers.
    Love the Video, carry on!
