- Kolkata mutton roll recipe: The kathi kabab and the kathi kabab roll originated at Nizam's on Hogg Street, Calcutta. As long time viewers will know, at Bong Eats, making a roll every pujo has become kind of a tradition. After our last two years' egg and chicken roll recipes, this year we wanted to return to where it all began. The classic roll at Nizam's restaurant is different from most other kathi rolls in Calcutta. Nizam's mutton roll is all about simplicity. A thin, crisp paratha wraps succulent, slightly chewy mutton kababs with some onions, green chillies, and lots of lime juice. That's it. No ketchup, no green chilli sauce, no other condiments. Unlike most other well known roll shops in Kolkata that use lachhha or layered paratha, Nizam's paratha is thin, single layered and shallow fried in very hot oil. This gives the paratha the blistered brown outside and the soft inside-so it can be easily rolled without cracking. The mutton kathi kabab, called so because the kababs are cooked on kathi or bamboo skewers instead of the usual metal skewers, is quite brilliant too. Because the roll is so simple, it lets the main components-the paratha and the kabab-take centre stage. That is why it is essential that the kabab and paratha both be perfect. Do give this a try!

I congratulate you. As a great consumer of these mutton rolls in the sixties from Nizams, beef and mutton I must say you have gotten pretty close to the original. Just a couple of points. The onions and chillies were not cooked but just freshly sliced. The parotha was not pure maida but a mixturre of atta and maida, probably half and half or only one third maida. The paper wrap had one edge rolled within the parotha so that it did not fall out. Finally, for grilling kababs it is best to have just a bit of fat on the kababs, to enable the drip to coat the meat and prevent charring. Mustard oil was not used, and is not required if each meat piece has an edge of fat. But, a very good recreation, nevertheless.
Oh hooray!!! Someone from my era. Yes, I agree, I made the same comments. The onions were not cooked or limed ahead of time. They squeezed the lemons/ limes at the last minute in front of you. This way the onions did not wilt but had a crisp texture. I remember the paper tucked inside the roll and I often bit into it, ha ha ha! Brings back memories! They also put egg into the porota, poured egg into the huge kara on the hot stove, and rubbed a cooked porotha over it, to get an omelette effect on one side. This gave it lots of taste. It was tandoori chicken kebab stick they added to each porota, onions, dhania leaves fresh, and lemon juice, and some salt.

Nizam was the first restaurant in Calcutta to invent the Kati Roll and what you see in Kusum is a copy of Nizam.
We love Nizam and Kusum and Hot Kathi and all of them. They are different styles. It is ok to have more than one favourite :-)
@@BongEats.. you should try the Dahi Chicken Roll from Fast Bite, (1 Topsia Road, opposite the Hindu Burial Ground...)along with their kebabs... Really yummy... It's their authentic recipe fr past 20 years now...
