In this video you’ll learn what an upblast exhaust fan is, and how it fits into the typical commercial kitchen ventilation system. Most kitchen ventilation systems are made up of an exhaust hood or canopy that is placed over any cooking surface, the connected ductwork, an upblast exhaust fan to draw the grease laden air to the outside, and a make-up air fan that draws fresh air in and equalize the air pressure in the system.
Upblast exhaust fans are usually installed on rooftops but are also occasionally mounted on a wall. No matter how the fan is installed, it will always be placed onto a fan curb as opposed to directly onto the roof or wall. This helps to make sure the fan is balanced and securely held in place.
The main components of an upblast exhaust fan are the fan curb, fan bowl, fan blades, and the fan motor. Exhaust ducts are connected to the upblast exhaust fan to draw cooking vapors, fat, oil and grease aerosols, and smoke contaminator air up through the ducts and exhaust them outside.
Over time, as the exhaust fan draws up this hot and contaminated air, grease and oil deposits will form on the fan blades and eventually build up enough to overflow from the fan bowl. Because of this, another important part of an upblast exhaust fan is the grease spout. This is where you can connect a rooftop grease containment system such as the Grease Box to help collect and contain any grease laden effluent from the fan.
It is very important for all of your upblast exhaust fan components to be easily accessible. It is required by the National Fire Protection Agency (NFPA) to have removable access panels on your ducts and a hinge kit installed on your exhaust fan. Exhaust fan hinge kits allow you to safely and easily tip your fan back into an open position without having to remove it from the fan base.
The most widely used type of rooftop ventilator is an aluminum centrifugal upblast exhaust fan. Centrifugal fans are constant displacement devices. They displace air radially and are designed to use kinetic energy to increase the volume of the airstream. They are generally considered to be quiet, sturdy, and reliable, as well as able to operate under a wide range of conditions.
Commercial kitchen upblast exhaust fans typically have either a direct drive motor or a belt drive motor. One is not necessarily better than the other. Belt drive fans do typically cost less upfront but may cost more in maintenance and repair. Direct drive fans are louder and have a higher initial cost but are very energy efficient. It all just depends on your needs.

You can often see what businesses lie within a building just by looking at their rooftops. These things are seen all over the place and are popular not just for restaurants, but also for commercial truck service stations.

How noisy are these things supposed to be? I just moved into an apt where this is located maybe 20 feet away from a window on the opposite building side and its making noise all night. It is very loud for a bedroom. Are there fans that can be installed at that distance and don't make loud noises?

That's all dictated by local restaurant health and safety codes, as well as your exhaust needs.
